Whether you’re hosting a soirée or craving a sophisticated snack, our Wild Mushroom Pate recipe is the answer to your culinary desires. This savoury delight combines the earthy richness of assorted mushrooms with the delightful crunch of toasted walnuts. The result is a savoury spread that’s perfect for any gathering.
Ingredients:
- 1/2 cup walnuts
- 4 tablespoons unsalted butter
- 1 pound assorted mushrooms, cleaned and chopped (about 7 cups)
- 3 medium shallots, finely chopped
- 1 tablespoon fresh thyme leaves, plus sprigs for garnish
- 1 teaspoon coarse salt or 1 teaspoon table salt
- 1 teaspoon black pepper
- 1/3 cup dry sherry, Madeira, or white wine
- 1/4 cup finely chopped flat-leaf parsley
- 1 teaspoon fresh lemon juice
- A dash of Tabasco sauce or a pinch of cayenne
- 1 package (250 grams) cream cheese, at room temperature
Method:
- Start by toasting the walnuts to enhance their flavor. Spread the walnuts on a baking pan and bake them at 350°F until they become fragrant, which should take about 7 minutes. Once done, transfer them to a bowl to cool. Once cooled, finely chop the walnuts and set them aside.
- In a large, heavy skillet over medium heat, melt 4 tablespoons of butter. Add the chopped mushrooms, shallots, and fresh thyme. Sauté these ingredients, stirring occasionally, until the mushrooms release their liquid and the skillet starts to dry out. This process should take about 5 to 8 minutes.
- Stir in the salt, black pepper, and your choice of sherry, Madeira, or white wine. Continue cooking until the skillet is almost dry, which should take approximately 10 more minutes. Remove the skillet from the heat and allow the mixture to cool.
- In a large bowl, combine the mushroom mixture with the toasted walnuts, finely chopped parsley, fresh lemon juice, Tabasco sauce (or a pinch of cayenne for a bit of heat), and the room-temperature cream cheese. Season the mixture with salt and pepper to taste.
- Line a 3-cup bowl or mold with plastic wrap, ensuring there’s a 4-inch overhang on all sides. Spoon the mushroom mixture into the prepared bowl. Cover it with the overhanging plastic wrap and press down firmly on the top to spread the mixture as evenly as possible. Refrigerate the terrine for at least 8 hours, or overnight, to allow the flavors to meld.
- Once thoroughly chilled, unwrap the terrine and gently invert it onto a small serving platter. To add a touch of elegance, decorate the plate with fresh thyme sprigs. Serve your Wild Mushroom Pate with crostini or any plain cracker of your choice.
