Why Wine and Cheese are a Heavenly Match

wine and cheese

Many have found themselves meticulously curating visually stunning cheese boards for gatherings, only to opt for a random bottle of wine from their collection without much consideration. This common scenario has prompted reflection among many. However, the art of pairing wine and cheese has the potential to elevate culinary experiences from the ordinary to the extraordinary.

In a recent turn of events, the author had the privilege of moderating two Wine & Cheese seminars at Kingston’s Corks & Forks Wine Festival, hosted by Savvy Company. Armed with the credentials of a certified Sommelier (with graduation from Algonquin College and WSET3) and a graduate of the George Brown College Professional Fromager Program, they seized the opportunity to merge their expertise in these cherished domains. The goal was to share insights that could elevate the hosting game of others.

Following these enlightening seminars, during which the concept of “perfect pairings” was thoroughly explored, numerous attendees approached the author with renewed zeal. They pledged never to serve just any wine alongside their cheese boards again. Instead, they acknowledged the profound impact that thoughtful wine selection could have on enhancing the entire culinary experience.

Both wine and cheese boast a complex interplay of flavours, textures, and sensations, which can be seamlessly harmonized. Appreciating the subtleties of this interplay is the key to creating memorable tasting experiences.

A Symphony of Tastes

Let’s explore the primary tastes found in both wine and cheese. Cheese offers a symphony of sensations, including saltiness, sourness, sweetness, bitterness, and umami. Additionally, cheese tends to be higher in protein and fat, affecting its mouthfeel and overall character.

On the other hand, wine introduces its own set of primary tastes: sweetness, acidity, saltiness (though rare), fruitiness, and tannins. These elements come together to create a unique flavour profile. Considering how these elements interact with one another is the key to successful pairings.

A Historic Love Affair

Wine and cheese share a rich history that has been a vital part of many culinary traditions, particularly in Europe. The saying “what grows together, goes together” aptly describes this harmonious relationship. Think Champagne and Brie, Raclette and Riesling, or Époisses and Sauternes.

In the new world, however, these pairings take a different approach, focusing on sensory compatibility. Below are some tips to consider.

Wine & Cheese Pairing Tips

Match Weight and Richness:

Pair the weight and richness of the cheese with the body of the wine. For instance, a creamy Délice de Bourgogne would overpower a light-bodied Pinot Grigio but harmonize beautifully with a creamy, lightly oaked Chardonnay.

Consider Flavour Intensity:

Match the flavour intensity of the cheese with that of the wine. Delicate cheeses and strongly flavoured wines, or vice versa, may not create a balanced pairing, as one could overshadow the other.

Acidity Harmony:

High-acidic cheeses pair well with acidic wines, as they complement each other and create a harmonious balance. Think goat cheese and Sauvignon Blanc.

Avoid Salt-Tannin Clash:

Refrain from pairing salty cheeses with high-tannin wines, as it can lead to a metallic taste sensation. Salty cheeses often fare better with semi-dry or sweet wines, as the sweetness offsets the saltiness. A classic example is the divine pairing of Stilton cheese with Port wine.

The synergy between wine and cheese is a culinary romance that can elevate your gastronomic adventures. By considering the weight, flavour, acidity, and saltiness of both components, you can embark on a journey of delectable pairings that will leave your taste buds singing. Whether you’re hosting a grand soirée or a cozy gathering, a well-matched selection can turn an ordinary occasion into a heavenly experience that lingers in your memory and palate. Cheers to the delightful world of pairings!
