Trail does a lot of “wild ferments”, which means they allow the natural yeasts already found on the berries to ferment the wine, as opposed to killing the wild yeast with sulfur and then introducing engineered yeast, as most wineries do. Wild ferments are risky but often bring unexpected – and unexpectedly wonderful – elements to the wine. This is a splendid example! Aged for 11 months in French oak, 40% of it new, the juice was also allowed to oxidize slightly.
Savvy Sommelier Tasting Notes: There are fruity notes of peach, lemon, and apricot here, overlaid with coconut, butter, and vanilla. There’s also a hint of sherry, lending the wine an unusual but very interesting complexity. This is a dry Chardonnay, with medium acidity, and is sure to please the Chard lovers in your crowd.
Suggested Food Pairing: Pair this with Coquille St. Jacques for a fancy dinner, or with chicken and waffles for fun!
