Pinot Noir is an absolute classic red to pair with a Thanksgiving feast and a go-to for many of the Savvy sommeliers at this time of year.  Thanks to its refreshing nature, medium light body, and low tannins along with that classic pop of red berry flavours, you’ll find Pinot Noir to be the perfect foil for a rich Thanksgiving meal.

While its roots are firmly planted in its ancestral home in Burgundy, France, this variety is considered grape royalty by winemakers around the world and it has found success in many cool to moderately cool climate growing areas such as Oregon’s Willamette Valley, New Zealand’s Central Otago and right here in Ontario.  The Niagara Escarpment, Prince Edward County and Carp Ridge in the Ottawa Valley all have the limestone-rich soils and the cooler climate this fresh beauty prefers.

In the glass, the colour of Pinot Noir ranges from bright cherry juice to dark ruby. The warmer the climate, the bolder the colour, and the flavours will shift from cranberry, sour cherry and wild strawberry over to raspberry, dark cherry and clove spice.  In France and Ontario, expect red fruit to shine along with some wonderful earthy notes of mushroom and dried leaves plus elegant minerality… perfect for Thanksgiving dinner!

Savvy Wicked Wine subscribers recently received  the 2019 Small Lots Pinot Noir made by Pinot Noir superstar, Rosehall Run, to celebrate their 20th Anniversary this year.  Most of the wine was aged in two-year-old oak barrels, but some was aged in special stainless steel barrels fitted with cherry wood.  Your glass will fill with scents of cherry, mushroom, beets and violets – and on the palate, cherry and cranberry burst forward, complemented by silky tannins and the perfect level of acidity.

Always one of the most popular wines among Savvy customers, the Red Trillium Ripasso is made by “re-passing” a blend of Pinot Noir & Cabernet Sauvignon wine over the freshly dried grape skins leftover from their Appassimento wine. It remains in contact with the pomace of the Appassimento for about ten days at which time a second fermentation occurs.

Savvy Sommelier Tasting Notes: Fruity and rich, with black cherries, dried figs, and black currants. There’s a little mint and cedar here, too, with medium tannins and acid. This full-bodied wine is a crowd-pleaser.

Suggested Food Pairing: This will work well with Italian cuisine, BBQ ribs, or even just a juicy hamburger.

Aged 10 months in French oak, this blend is 30% Cabernet Sauvignon, 30% Cabernet Franc, and 40% Merlot.

Savvy Sommelier Tasting Notes: There’s so much going on here! Black plums, red cherries, mint, cedar, tobacco – the flavours are big and complex. The tannins are big, too, and chewy, with matching high acidity. The wine finishes long with the plum flavour lingering on the palate.

Suggested Food Pairing: This is the wine to bring to Sunday dinner, equal to your roast beef and trimmings.

Winemaker Steve Byfield says he makes the Veritas (taken from the famous saying, “In vino veritas”, or “In wine, truth”) only in optimal years. This is a blend of Cabernet Franc, Merlot, Cabernet Sauvignon, Syrah, and Malbec.

Savvy Sommelier Tasting Notes: The medium cherry colour belies the power of this big red. It’s full of tart cherry, mint, and tobacco, with mouth-puckering tannins and acidity. There’s a lot of fruit here, with the sour cherry dominant.

Suggested Food Pairing: Steve recommends this with lamb shanks, beef stew, or a well-aged cheese.

Cellaring: This will do well to cellar 5-8 years if you can keep from drinking it right away!

Creekside Estate Winery: Laura’s Red

Entirely grown and made on the Creekside estate, this is a blend of 40% Cabernet Sauvignon, 30% Merlot, 25% Cabernet Franc with smidgen of Malbec and Petit Syrah to fill out the palate. It was aged for 12 months in French oak. The winemaker recommends opening it an hour before drinking to let it breathe.

Savvy Sommelier Tasting Notes: There’s lots going on here! Aromas of dark fruit, steak spice, leather, and cedar are matched on the palate, too. But there’s more – tobacco and mint begin to show up with subsequent sips. Loads of chewy tannins and medium sour cherry acidity make it a complex, full bodied wine. You won’t be disappointed!

Suggested Food Pairing: A big wine deserves big flavours. We recommend braised short ribs or a rack of lamb to complement the wine.

Cellaring: Ready to drink now, it could be aged up to 5 years.
