Another example of winning wild fermentation, this Pinot Noir was aged in French oak barrels with no new oak for nine months. 

Savvy Sommelier Tasting Notes: Don’t get fooled by the light colour here: this is a full-flavoured wine! Earthy, with notes of red licorice, sour cherry, and red cherries, it’s going to surprise you with it’s power and elegance. Medium acidity and medium tannins show off this brilliant Pinot Noir.

Suggested Food Pairing: Have this with grilled pork chops with a side of butter-sautéed onions and mushrooms.

Trail does a lot of “wild ferments”, which means they allow the natural yeasts already found on the berries to ferment the wine, as opposed to killing the wild yeast with sulfur and then introducing engineered yeast, as most wineries do. Wild ferments are risky but often bring unexpected – and unexpectedly wonderful – elements to the wine. This is a splendid example! Aged for 11 months in French oak, 40% of it new, the juice was also allowed to oxidize slightly.

Savvy Sommelier Tasting Notes: There are fruity notes of peach, lemon, and apricot here, overlaid with coconut, butter, and vanilla. There’s also a hint of sherry, lending the wine an unusual but very interesting complexity. This is a dry Chardonnay, with medium acidity, and is sure to please the Chard lovers in your crowd.

Suggested Food Pairing: Pair this with Coquille St. Jacques for a fancy dinner, or with chicken and waffles for fun!

100% Prince Edward County Cabernet Franc, made in a style that’s quickly becoming popular in Ontario: a dry, flavourful rosé that packs a wallop!

Savvy Sommelier Tasting Notes: Pale salmon in colour, there are notes of strawberries and tobacco here, similar to the famous rosés of Tavel. It’s certainly dry, bringing medium acidity to balance the fruity flavours.

Suggested Food Pairing: Enjoy this rosé on its own or with a Salad Niçoise.

Huff left this fruit on the vine quite late in the season, allowing the berries to soak up the warm fall sun and develop good acidity. It’s 100% county fruit, left on the lees during fermentation.

Savvy Sommelier Tasting Notes: Beautifully perfumed with white flowers, pineapple, and other tropical fruit, there’s a light sweetness but medium-plus acidity here. It has some body, too, and the pretty floral notes persist to a long finish. This is a wow! wine, especially for lovers of French Pinot Gris.

Suggested Food Pairing: This will go well with poached chicken in a rosemary sauce, lending mouth watering acidity to the dish.

Unusual for Huff – one of the County’s best-established wineries – this lovely Riesling is made entirely from Niagara fruit.

Savvy Sommelier Tasting Notes: Barely off-dry, there is a lot of fruit and minerality here. Peaches and melons dominate, with some pretty lemon tartness. It’s well balanced and delicious!

Suggested Food Pairing: The winemaker recommends buttered scallops with this Riesling, and we agree. It would also go well with curries and other spicy foods.

100% Estate grown in Prince Edward County, winemaker Keith Tyers took great advantage of a cooler growing year, drawing out both the acidity and minerality of the terroir. Aged for 16 months in French oak, it shows off the restraint and delicacy of the vineyards. This wine won a Gold Medal at the National Wine Awards in 2016.

Savvy Sommelier Tasting Notes: Incredibly complex, there are notes of vanilla, toast, melon and apricot, with an underlying expression of minerals and hay from the lees. Food friendly, there’s lots of lemony acidity to excite the palate. 

Suggested Food Pairing: The toasty flavours and green apple acidity will work well with a cream-based soup, like a New England clam chowder.

Cellaring: Ready to drink right away, this could be cellared for up to 2 years.

A lot of wineries claim to make New Zealand-style Sauvignon Blanc, but here’s one that deserves the title. Winemaker Mike Traynor studied winemaking in NZ, and brought back the lessons he learned: don’t over-ripen, don’t expose to air, and embrace the grapes’ own flavours. It works!  

Savvy Sommelier Tasting Notes: This is classic Sauv Blanc: beautiful canned green beans and lemon leveraged with County minerality. There’s lots of lime acidity and a long lemon-lime finish.

As the name says, this was fermented on the skins – an usual approach for ‘traminer, but one that has certainly worked here.
