The White Room, $3.50 (4.5% ABV)

Brewmaster Tasting Notes: This Gose Style beer pours pale yellow with a pillowy white head.  Mouth feel is light to medium. Up front tart from the kettle souring; gives way to a sharpness from the salt and then ending with a crisp, clean, dry finish.

Suggested Food Pairing: Enjoy this with BBQ or sea food.

 

Hopped Up On Pils, $3.50 (4.7% ABV)

Brewmaster Tasting Notes: Pilsner. This beer pours a clear light yellow with a sturdy white head. The nose is floral and earthy, over notes of corn chips. The mouthfeel is light to medium. Flavours of biscuits and crackers are balanced by a lemon citrus bitterness from the Helga Hop and Lemon Grass.

Suggested Food Pairing: I’m thinking Tacos and a Patio… See The Ultimate Fish Tacos recipe at the bottom.

 

 

Five Island Watermelon, $3.50 (4.5% ABV)

Brewmaster Tasting Notes: Gose. The beer pours a cloudy pale yellow like its peach brother. The head is a white pillow that dissipates quickly. The nose is a blast of watermelon with the faint smell of cut flowers to back it up. Take a sip…watermelon hits your tongue like a hammer. The super fresh combination of tart, salt, and sweet watermelon are like you’re drinking a “Watermelon Jolly Rancher”.

 

 

Summer Solstice, $3.50 (5% ABV)

Brewmaster Tasting Notes: Pale ale. This beer pours a cloudy translucent orangey yellow.  The head is thick and sturdy, lasting for ever before giving way to a beautiful sticky lacing. The nose is tropical fruit and wet pine forest. The mouthfeel is slightly bigger than medium. The flavour is exactly what you would expect from the nose… Juicy tropical fruit with huge notes of grapefruit, pine, and citrus; all balancing out this hoppy but not overly bitter pale ale.

Suggested Food Pairing: Try “Brewing Great Company” with a big glass of this delicious summer offering, some spicy food and friends…

 

 

Kichesippi Beer Co.

Champions Light, $2.95 (4.2% ABV)

Cheers to the Ottawa Champions Baseball Club for supporting Ottawa Craft Beer since opening day 2015.

Brewmaster Tasting Notes: Kichesippi Beer and The Clocktower Brew Pub worked in collaboration to bring you an easy drinking refreshing summer light beer with flavour.

 

Bristol Stout, $2.95 (4.8% ABV)

Our inspiration for this beer comes from our family who have been farming in Bristol, Quebec since 1925. This 150 acre farm has seen a lot of change over the years but still remains in the family. We first started out with dairy cattle and now are farming soybeans and hay.

Brewmaster Tasting Notes: This stout offers a balance of roasted malts and residual sweetness.

 

Commissariat Old Stock Ale, $3.10 (4.4% ABV)

BRAND NEW! You are the first to get it.  Kichesippi Beer has announced the release of a new beer that celebrates a milestone birthday for one of Ottawa’s oldest cultural attractions. This is an ale brewed to mark the 100th anniversary of the Bytown Museum.

“Our inspiration for this beer was a style that we feel would have been enjoyed back in 1917,” says Kichesippi founder Paul Meek. “The Bytown Museum is definitely a gem hidden in plain sight in our city and we hope this beer will help bring some well deserved attention to the museum.”

Commissariat Old Stock Ale is currently available in a limited run at the Kichesippi retail store, and it will also be available at special events at the Museum over the summer. A larger production run will take place in the autumn in conjunction with the Museum’s official birthday in October.

 

Railway City Brewing Co.

Dead Elephant Ale, $3.15 (6.5% ABV)

Brewmaster Tasting Notes: An India Pale Ale with a full body. Aromas of mild malt and a robust floral bouquet. Tastes of sweet & fruit malts (i.e. apricot & mango), upfront, slight candy & biscuit notes, and grapefruit. A perfume finish.

 

 

Express India Session Lager, $3.15 (4.8% ABV)

Brewmaster Tasting Notes: A light/medium body with aroma of complex hops such as citrus, tropical fruits, and pine. Tastes of lemon, orange, pineapple & mango, pine notes, crisp & light malt background, with a lingering bitterness that isn’t overpowering.

 

 

Crew Craft Lager, $3.15 (4.8.% ABV)

Brewmaster Tasting Notes: This is a premium lager with a light body and aromas of pear & citrus notes and a hint of toasted spice. The taste is sweet fruit & citrus, slight toasted spice, hint of floral hops, and with a crisp & refreshing finish.

 

 

Honey Elixir, $3.15 (5.0% ABV)

Brewmaster Tasting Notes: A brown ale with a medium body and an aroma of sweet, fresh honey, some raisin & fig, and a hint of toasted nuts & spices. Tastes of honey, taffy, and subtle espresso. A balanced hop finish with sweet fruit notes.

 

 

Waller St. Brewing

Hideaway Hefe, $5 (5.0% ABV)

A nice refreshing wheat beer with character, perfect for sunny days!

Brewmaster Tasting Notes: A hazy golden yellow German style wheat – a hefeweizen only slightly out of style. The fermentation profile flavours the ester production over phenol providing that signature “Banana” balanced by an unusual hop addition.

 

Juice Joint Sour, $7 (5.0% ABV)

This is a very refreshing and aromatic beer with an identity crisis. Dry-hopped like an IPA without any real bitterness and with a tangy tart acidity twist.

Brewmaster Tasting Notes: Very refreshing with a big dry-hop character that could be easily be mistaken for tropical citrus juice.  Think the mimosa of beers, only without any actual oranges.

 

French Connection, $10 (4.7% ABV)

Our interpretation of this French saison style respects the light, refreshing purpose of this beer style. We made this beer with Brasserie du Bas Canada. A fun collaboration with our new friends from across the river.

Brewmaster Tasting Notes: Blonde and cloudy the grisette finishes off dry, perfect for the summer heat. The compliment of yeast and hops give French Connection pleasant spice notes and a herbal aroma.  Brewed with European hops along with a mixture of French and Belgian Saison yeast.

 

 

~ RECIPES TO ENJOY WITH YOUR SAVVY HIP HOPS! ~

 

Veal Burger with Avocado and Cheese

Serves: 4

Ingredients

500 g lean veal mince
1 teaspoon salt
½ teaspoon white pepper
1 clove garlic, crushed
2 tablespoons cream

1 tablespoon tomato paste
1 tablespoon light olive oil
1 tablespoon oil
1 firm ripe avocado, peeled and thinly sliced
½ cup grated cheddar cheese
2 tablespoons freshly grated parmesan cheese
4 large squares of olive focaccia
1 small bunch rocket, torn into pieces
Snow pea sprouts
Lime juice

 

Method

Combine mince, salt, pepper, garlic and cream in medium bowl. Mix with hands until well combined. Divide mixture into 4 portions and shape into round patties.

Combine tomato paste and light olive oil in small bowl; set aside. Heat remaining oil in large frying pan. Cook patties 3–4 minutes each side or until brown and cooked through. Remove patties from frying pan, drain on paper towels.

Place patties on a foil-lined grill tray. Top each with overlapping slices of avocado. Brush each with tomato paste mixture. Sprinkle with combined cheeses. Cook under preheated grill for 1–2 minutes or until cheese has melted.

Cut each focaccia in half horizontally. Lightly toast cut sides if desired. Place bases of focaccia on 4 serving plates. On each base, place rocket pieces and snow pea sprouts. Sprinkle with a little lime juice. Place a meat and avocado patty on top of each base, followed by remaining half of focaccia.

 

 

The Ultimate Fish Tacos

Serves: 8-10

Ingredients

2 pounds mahi mahi (skinned, boned and cleaned) cut into 1-ounce strips
2 cups all-purpose flour
3 eggs, lightly beaten
4 tablespoons water
2 cups panko bread crumbs
Kosher salt and freshly ground black pepper
Vegetable oil, for frying
1/2 head savoy cabbage, finely shredded
1 bunch cilantro, leaves picked
1 bunch chives, chopped
3 limes, cut into wedges for garnish

Pink Chile Mayonnaise:
1 cup sour cream
1 cup mayonnaise
3 chipotles in adobo, plus 2 tablespoons of adobo sauce
1/2 lemon, juiced
Kosher salt and freshly ground black pepper

Mango-Radish Salsa:
2 limes
2 mangoes, diced
4 to 5 red radishes, diced
1 red onion, diced
1 tablespoon chili powder
1/2 bunch fresh cilantro, leaves chopped
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

 

Method

Prepare the fish. Cut the pieces of fish into 1-ounce strips. Set up a breading station of flour, lightly beaten eggs with water, and seasoned panko bread crumbs. Season all with salt and pepper. Dredge the pieces of fish in flour, egg then bread crumbs. Once all the fish is breaded deep-fry in small batches in (375 degrees F) oil. Drain on paper towels and season with salt. Keep warm until ready to serve.

Prepare the pink chile mayonnaise. Put the chipotles in a blender and puree until smooth. Add the sour cream, mayonnaise, adobo sauce and lemon juice and continue to process until the mixture is consistent and creamy. Season with salt and pepper and refrigerate until ready to use.

Prepare the mango-radish salsa. Remove the peel and pith from the limes and cut between the membranes to remove the segments. Put these “supremes” into a bowl and squeeze over the juice from the membranes. Add the remaining ingredients and mix. Season and refrigerate until ready to use. You can also place all of the ingredients into a food processor and puree for a smoother salsa.

To serve, set up the tacos “family-style”. Assemble the fish in a pile on a plate; the pink chile mayonnaise in a bowl; and mango-radish salsa in another. Set a pile of shredded savoy cabbage, cilantro leaves, chopped chives and lime wedges next to the fish. Toast the corn tortillas lightly over an open flame (on your stove top) and serve.

 

 

Asian Chicken Salad with Ginger Sesame Dressing

Serves: 4

Ingredients

Salad dressing:
1/4 cup rice wine vinegar
1 teaspoon chopped fresh ginger or 1/2 teaspoon powder ginger
1 to 2 tablespoons soy sauce
1 tablespoon honey
3 tablespoons toasted sesame oil
3 tablespoons vegetable oil
2 tablespoons sesame seeds, toasted

Salad:
6 cups baby spinach leaves, washed, and dried
1 large carrot, shredded
1 red bell pepper, thinly sliced
1/4 of a whole red onion, thinly sliced
1 tablespoon sesame seeds toasted
2 cups shredded rotisserie chicken or grilled chicken, sliced

 

Method

Combine all salad dressing ingredients, except for sesame seeds, and using only 1 tablespoon of soy sauce. Whisk until emulsified. Taste your dressing and add another 1 tablespoon of soy sauce, if desired, to make it saltier. Add 2 tablespoons sesame seeds to the dressing and mix them in.

Combine all salad ingredients in a large bowl, except for 1 tablespoon of sesame seeds and chicken. Add the salad dressing to the salad and toss – do not add all salad dressing at once: you might not need all of it. Add just enough salad dressing to coat the salad ingredients.

Serve the salad in the individual serving bowls and top with the remaining 1 tablespoon of sesame seeds and sliced chicken.

It is fitting that during a month filled with spending time with friends and family, that we feature a family-focused craft brewery dedicated to preserving an important resource and key beer-making ingredient (water!) as well as promoting Ottawa’s history with every beer.

Introducing…
Kichesippi Beer Co.

I met with the man behind the brewery – Paul Meek – as well as the Ops Man – Philip Ware – at the brewery on a chilly November morning. As we settled into the office to chat, they were both pleased to announce that they are in the process of expanding the brewery in order to provide space for special events. Taking over space located right next to the brewery, they will be able to accommodate groups for work-related events or friendly gatherings or large group tastings.   They anticipate having this new space available in the New Year.

The Great River

bottling lineIn 1855 when the city of Ottawa was founded, Kichesippi was the name of the river that ran through the city. The brewery is intentionally focused on preservation; not only preserving Ottawa’s natural resources, but also on preserving it’s history.

For every brewery tour, $1 is donated to Ottawa Riverkeepers.   When I asked Paul how this came about, he explained,“without clean water, we can’t make a good product. It was only fitting that we give back in some way to this natural resource that is a key ingredient in every brew.” Kichessippi is now also an “official keeper” of part of the Ottawa River (more specifically, Bate Island, located under Island Park Drive & Champlain Bridge). Twice a year, all employees head to the Island for a ½ day to help clean it up, and they are already seeing what a difference they’ve made.

It’s all about family

You may or may not know this, but Kichesippi also makes it’s very own line of olde fashioned soda! Released in 2013 under the name Harvey & Verns, they started out offering Root Beer, then quickly expanded to a Ginger Beer and a Cream Soda. And this year,a new Lime Soda was added.

creamsoda_2048x2048Who are Harvey and Vern? Harvey was Paul’s grandfather, Vern, his father-in-law.   Why sodas? Paul replied that “a lot of what gets created at Kichesippi is about me reliving my youth”, and out of this came his idea for making soda. When Paul was a kid, he would go visit his grandfather on their farm located in Quyon, Quebec, and after helping on the farm all day, they would wash up in the lake and then Harvey would take him out and buy him a soda pop.

Looking around the industry, they saw that friends and fellow breweries in Canada and the United States were making their own line of sodas. They realized they had the infrastructure to make sodas too – no additional equipment would be required – so, “we went for it” says Paul.

I confess – the Ginger Beer is my favorite with it’s zingy, powerful ginger flavor. Kids, however,seem to love the Cream Soda and Root Beer. The sodas are available at the brewery, as well as many restaurants and food trucks in and around Ottawa.

Caring about the community

Not only does Kichesippi care about the city’s natural resources, they also care about promoting Ottawa’s history (every beer has a story that gets tied into it’s name and packaging): the 1855 honors the history behind the Alexander Bridge and Ottawa’s incorporation; the Logger, promotes Ottawa’s logging industry back in the 1800’s. There is plenty of thought and research done to help preserve Ottawa’s history with every beer.

Kbeer bicycleMany schools tour the brewery. Young minds curious about how their passion for science and chemistry might lead them down the path of making fine craft beer one day.

Along with donations to the Ottawa Riverkeepers, a portion of the sales from each growler sold goes toward Juvenile Diabetes research (in support of his Paul’s son Alex). Kichesippi sponsors many local recreational sports teams, tournaments and festivals. And Paul has also partnered with the Ottawa Chamber of Commerce to promote business education for new entrepreneurs, and is a member of the Beer Canada Lobby group.

For all these reasons, in November, the mayor of Ottawa honored Paul and 13 other nominees with the Order of Ottawa, to celebrate outstanding citizens for their contributions in various areas of life which has benefited others in the community.   When I bring this up with Paul, he is of course thankful for the honor, but can’t help but refer to it as being something that “we” (the Kichesippi family) received.

Savvy Hip Hops Tasting Notes •

Below are Melanie’s tasting notes for each beer, additional information on the beers, along with suggested food pairings and recipes to try out with your beers.

Ice Harvest Eisbock

Membership has benefits! All of our Savvy Hip Hop suds-scribers are lucky indeed, as I wasn’t able to taste this creation since it’s a limited edition and was only brewed in small quantities! Eisbock (which means “ice strong beer”) undergoes a freezing process that concentrates the sugar and alcohol in the brew (similar in theory to keeping grapes on the vine so that they will freeze, concentrating the flavors within and creating ice wine). Kichesippi brewed this special in order to celebrate their 5th anniversary earlier this year. After the party, Paul stashed away enough bottles for us to include in your Taste Case. 13.8% ABV

Tasting Notes: I cannot comment specifically on Kichesippi’s Eisbock since I was unable to try the goods, however for this type of brew, this is a full-bodied beer and although you will taste the high alcohol content, it should not be harsh or overpowering, but provide more of a warming feeling. Dark coffee or cola in colour and a syrupy mouth-feel, this will provide lovely malty, rich flavours on the palate.

Suggested Food Pairing: Strong cheeses such as Limburger or Gouda, or roasted game meat.   Personally, I would love to try this with my Grandpa Allen’s Christmas Pudding!

 

Wuchuk Black logoWuchak Black

This Black IPA (Cascadian Dark Ale) was Kichesippi’s first, and is now their most popular seasonal brew. Ideal for this time of year with roasted malt flavors, and the major hop presence that you would expect from an IPA.Black, bitter and strong.6.0% ABV and 77 IBUs.

Tasting Notes: Very dark brown (black really) color. On the nose: roasted coffee and dark chocolate. On the palate: black licorice, roasted coffee with a slightly bitter finish.

Suggested Food Pairing: This IPA would be delicious with various slow-cooked meats (think gamey stews), but I would also venture trying this with some Mole Chicken or Chocolate Bacon Brownies.

 

Heller Highwater logoHeller Highwater

This beer (Helles) is a pale straw coloured Bavarian Lager. Brewed with German noble hops and genuine Munich yeast, it is a classic example of the session beers enjoyed in Bavarian beer gardens. The beer has a clean malt flavour with a slight hop presence. 4.8% ABV and 19 IBU.

Tasting Notes: Medium golden color with a fluffy white head when poured into a glass.Slight aroma of cereal grains (malt), citrus and herbs on the nose. Smooth and crisp, very refreshing and clean with a repeat of the malt, citrus and mild hoppiness on the palate. Creamy mouthfeel with a mild hoppiness on the finish.

Suggested Food Pairing: Helles beer comes from Bavaria (Germany), so I say, have this with your favourite German-style food on a bun: bratwurst (or currywurst) sausage or chicken (or veal) schnitzel.

 

radlerRadler

Radler first became popular in 1922 in the town of Deisenhofen, Germany. The beverage was an instant favourite with the local cyclists travelling from Munich. Kichesippi first made this beer in 2014 to celebrate the 20th Anniversary of Pub Italia (located on Preston Street in Ottawa). 3.0% ABV, 0 IBUs.

Tasting Notes: Cloudy orange colour with a hint of pink.On the nose, fresh aromas of candied grapefruit and tangerines. Flavors repeat on the palate, which a nice touch of cereal (malt) to balance it out. A really great Radler that still tastes like a beer and provides a refreshing and crisp finish.

Suggested Food Pairing: Salads where the main attraction is citrus fruit and nuts, but I would also recommend this with lighter meat dishes, such as Orange-braised pulled pork tacos.

 

bristol stoutBristol Stout

The inspiration for this beer came from family who have been farming in Bristol, Quebec since 1925. The family first started out with dairy cattle and now are farming soybeans and hay. This stout offers a balance of roasted malts and residual sweetness.   4.8% ABV and 36 IBUs.

Tasting Notes: Dark brown in color, there is definitely a sweet aroma on the nose, some honey and milk chocolate. On the palate a repeat of this but add to it French Canadian taffy (in French, it’s called “la tire de Ste-Catherine”) and light maple syrup.

Suggested Food Pairing: Go ahead and have this with a hearty brunch that includes Banana Pancakes and a side of bacon! Try the recipe on the following pages.   I also wouldn’t hesitate to have this with dessert, something not overly rich or sweet: a Caramel Flan.

With Kichesippi Radler

Orange-braised Pulled Pork Tacos

Prep Time: 20 minutes
Cook Time: 4 hours (stove top) or 8 hours (slow cooker)
Yield: 10 tacos

Ingredients

pulled poke2 tbsp Olive Oil
1 1/2 kg Pork Shoulder Roast
1 Medium Onion, finely diced
4 Garlic Cloves, finely diced
1 tbsp Fennel Seeds
1 tsp Cumin Seeds
zest and juice from 3 oranges
2 cups Salt Reduced Chicken Stock
6 cups Water
1/2 tsp Black Peppercorns
Your favourite coleslaw
10 Flour Tortillas

Method

Place a large saucepan / stockpot over medium heat.

Add 1tablespoon of the oil, once hot, add pork and sear on each side until a golden. Remove and set aside.

Add remaining oil, and once hot, add onion, cooking for a few minutes, then add garlic, fennel and cumin seeds and cook for a further 2 minutes.

Return pork to the pan and add orange zest and juice, stock, water and black peppercorns and bring to the boil. Reduce heat to a simmer and continue cooking, covered, on low heat for 3 – 4 hours. Alternatively cook in slow cooker for 6 – 8 hours. Once cooked the meat will shred / pull apart very easily but keep in stock on low heat until ready to serve.

To serve, heat tortillas according to packet instructions. Remove pork from stock retaining some of the orange zest and stock to drizzle over the pork. Place some coleslaw on the tortilla topped with pork, extra coriander and chilli if desired. Drizzle with a little of the pork stock for extra juiciness and flavour.

 

With Kichesippi Bristol Stout                    

Homemade Banana Pancakes

Prep Time: 20 minutes
Cook Time: 10 minutes
Yield: 12 4-inch pancakes

pancakesIngredients

1-1/2 cups all purpose flour, spooned into measuring cup and leveled off
2 tablespoons sugar
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1 small, over-ripe banana, peeled (the browner, the better)
1 cup low fat milk
2 Tbsp craft beer – IPA or ale are recommended
2 large eggs
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter, melted

For Cooking

Vegetable oil
Unsalted butter

For Serving

Maple syrup, Sliced bananas, Confectioners’ sugar (optional)

Method

In a medium bowl, whisk together the flour, sugar, baking powder and salt.

In a small bowl, mash the banana with a fork until almost smooth. Whisk in the eggs, then add the milk and vanilla and whisk until well blended.

Pour the banana mixture and the melted butter into the flour mixture. Fold the batter gently with a rubber spatula until just blended; do not over-mix. The batter should be thick and lumpy. Adjust the thickness of the batter by adding more beer – tablespoon by tablespoon until you get the right consistency.  Slaving over the griddle is hard work, so enjoy the rest of the open bottle.

Set a griddle or non-stick pan over medium heat until hot. Put a pad of butter and one tablespoon vegetable oil onto the griddle, and swirl it around.

Drop the batter by 1/4-cupfuls onto the griddle, spacing the pancakes about 2 inches apart. Cook until a few holes form on top of each pancake and the underside is golden brown, about 2 minutes. Flip the pancakes and cook until the bottom is golden brown and the top is puffed, 1 to 2 minutes more. Using the spatula, transfer the pancakes to a serving plate.

Wipe the griddle clean with paper towels, add more butter and oil, and repeat with the remaining batter.

Serve the pancakes while still hot with maple syrup, sliced bananas and confectioners’ sugar if desired.

 

With Kichesippi Wuchak Black

Bacon Caramel Brownies

Total Time: 1 hour 10 minutes
Yield: 16 pieces

Ingredientsbrownies

For the bacon caramel:

2 slices bacon
½ cup heavy cream
1 cup sugar
6 Tbsp. salted butter

For the Brownies:

8 Tbsp. salted butter, cut into pieces
6 oz. bittersweet or semisweet chocolate, finely chopped
¼ cup unsweetened Dutch-process cocoa powder
3 large eggs
1 cup sugar
1 tsp. vanilla extract
1 cup flour

Method

In a small saucepan, fry two slices of bacon until crisp (pre-cut bacon in half). Once cooked, remove bacon from saucepan and set aside, and reserve bacon grease in the pan.

Add cream to the pan and let cool. When bacon is cool, chop finely.

In a larger pan, heat the sugar over high heat until the mixture is liquid and a deep amber color. Add the butter and the cooled bacon cream all at once, and stir until the butter is melted. Add the chopped bacon and let the mixture cool thoroughly.

Preheat the oven to 350 degrees.

Line an 8 inch square pan with Parchment paper that covers the bottom and sides of the pan. Grease with butter or cooking spray.

In a large microwaveable bowl, melt the butter and the chocolate together in the microwave (start with 30 seconds, and stir thoroughly, then microwave for 10 seconds at a time, stirring between each bout of nuking, until the chocolate is melted and incorporated into the butter).

Add the cocoa and whisk until smooth, then add in the eggs, one at a time, and the sugar, vanilla and finally the flour. Stir only until combined.Scrape half of the batter into the prepared pan. Then drop about a third of the bacon caramel, evenly spaced, over the brownie batter in the pan. It doesn’t have to cover the whole batter, but should be in splotches.

Spread the remaining brownie batter over the top, then drop spoonfuls of the remaining caramel sauce over the top of the brownies and swirl.

Bake for 35 to 45 minutes.

The Savvy Brew Crew can’t believe the high fives & rave reviews we have been receiving since launching Savvy Hip Hops  just a few months ago. A BIG thanks to our suds-cribers!

hiphops_largeThis month features Kichesippi Beer, a unique craft brewery located in the heart of Ottawa. What exactly does Kichesippi mean? By definition it is ‘The Great River’ during the time of 1855 when the City of Ottawa was founded. Prior to that era, the river running through it was known as ‘Kichesippi’.  Owner Paul Meek with his wife Kelly – integrates the regional community heritage into their beers. There is an Ottawa based story for everything about the brewery & its beers.  When you meet Paul or anyone from Kichesippi, ask them about ‘Wuchak’ series of beers (brands: Black, Polaris, Throwback & UK).  What is a ‘Wuchak’, you ask? It is the Algonquian name for “woodchuck”.

Our Savvy Brew Crew member, Éva Nagy, first visited the brewery when she was a ‘student of beer’ during the time she enrolled in The Beer Course (part of Algonquin College’s Sommelier program). The brewery had just opened its doors.  Part of their ‘field trip’ was a brewery tour that brought all her learned textbook theory bursting to life. “Quite a few new beers have been introduced since that time & I must taste them all!”, she notes with glee & a laugh.

Introducing…

Kichesippi Beer Company

Kichesippi beer low resIt all began in a nondescript warehouse that housed the former Heritage Brewing Company. At first, Kichesippi contracted all of their brewing to Heritage (they just brewed Natural Blonde at that time). When Heritage’s owners were ready to retire, Paul Meek stepped in to take over the brewery & made it the home for Kichesippi Beer Company. As a long time Savvy friend (Paul had worked in the wine world as well), we raise a glass & celebrate with him & his team each April – the anniversary of their business.  Paul remarks how easy all of this has come together for him since he started a mere five years ago.

Paul, had worked with larger breweries as well as small importers. Being in ‘the beer biz’ since his university days, it became clear to him that in Ottawa there was a desire for imported craft beer.  Peculiar was the name of the strong English ale from the Halifax-based Granite Brewery that was his inspiration for his own brewery. He had the confidence & his family’s support to forge out on his own & make a go of making local craft beer.  Now, Paul (and his family) don’t have the time to look back! The brewery is constantly growing & receiving accolades for their business and their beers.

For Paul, it’s all about family. The key motivation for their family-owned brewery is his wife Kelly & 14 year-old son Alexander. In fact, it is Alexander who designs the bottle caps & gets involved in being one of the lead ‘developers’ to create the recipe for Harvey & Vern’s Old Fashioned Sodas (cream soda, root beer & ginger beer). It has become another success story.

Paul’s focus is to bring balance with flavours & aromas to each of his beer styles. He receives his supply of Polaris hops directly from the farmers in Germany. He prides himself on being their largest contractor. It is these hops that bring that refreshing bitterness to Wuchak Polaris (at 61 IBUs).

Paul Meek - pouringPaul has seen tremendous growth in the Ottawa market. Not so long ago, there were only two breweries in the city: Kichesippi & Clocktower Brew Pub. Paul commends his fellow craft brewers for being courageous & trying new things. Now Ottawa boasts upwards to 10 craft breweries…and counting.

“We are the biggest of smalls in the city”, explains Paul, meaning that they are a fully functioning facility including stills, bottling & canning lines. This comes with a steep learning curve for supplies needed for making beer from grain to glass. “We even have a forklift”, he laughs. (Apparently that is an industry sign of size!)  They’re the first  in Eastern Ontario to package their beer – Heller Highwater – in a can. And our Savvy Hip Hops suds-cribers are the first to receive the cans that were just launched last week.

Kichesippi has a friendly atmosphere & loyal customer following. One day, a regular customer & former security professional, heard Paul in discussion with staff about a drink called ‘lemon squash’. Well didn’t this customer return from his trip to Australia & drop by the brewery with a bottle of lemon squash in hand for Paul & his crew. WOW!

What?!?! The brewery is closed?

Once a month, Kichesippi is shut down for Pizza Friday. Family & brewery staff can relax & enjoy some ‘zas with beer … and not their own beer. Paul wants his team to enjoy each other’s company along with spending time learning about the local craft beer world – together.

What’s next?

Paul will mark the brewery’s 5th anniversary with a new & special brew. Despite my nudging, the only hint he would give is that it will be “unique to our market”.

Kichesippi Natural Blonde

Kichesippi BlondeA golden pale ale with 4.9% ABV (Alcohol by Volume) & 30 IBUs (International Bittering Units). IBU scales attempt to rate the perceived relative bitterness of beer provided by the hops used during the brewing process.

Tasting Notes: Golden in colour with aromas of citrus, tropical & stone fruit (think apricot & peach), light toasty malt, soft honey-like sweetness and grain. The flavours are rich & balanced with refreshing bitterness & minerality. It’s finishes slightly sweet then transforms quickly to crisp & clean.

Suggested Food Pairing: This hoppy pale ale would accompany spicy butter chicken, mango chutney & jasmine rice with ease.

 

Kichesippi 1855

1855This amber ale is 5.1% ABV with 31 IBUs. 1855 refers to the year the City of Ottawa was founded.

Tasting Notes: Copper in colour with malty, fragrant floral hops, demerara sugar & coffee aromas. Flavours range from smoke, yeasty bread, rich chocolate & toasty notes to hop oil bitterness & grapefruit. The finish is reminiscent of soya sauce inviting you back in for yet another sip.

Suggested Food Pairing: A balanced amber ale such as this would be a perfect match for your appetizer cheese course of aged Manchego, sharp cheeses, mixed nuts & fruit jams. Yes, beer & cheese for it’s no longer all about wine & cheese!

 

Heller Highwater

HellerHighwaterHelles is a Bavarian lager using German Noble Hops. Hell is the German adjective for “light,” while Helles is a noun used in the sense of “a light one.” When brewed to perfection it highlights subtle, rich, elegant maltiness & lingering noble hoppiness.

Tasting Notes: It lives true to its meaning of “light one” with its clear gold brightness. Enticing aromas of grain/wheat, wildflower honey & noble hops. The flavours follow suit adding peaches & cream corn and grassy notes to the aromas.

Suggested Food Pairings: Grilled bratwurst with Dijon mustard & sauerkraut is a classic match for this crisp & refreshing German-style lager.

 

 

• Recipes to enjoy with the featured Savvy Hip Hops •

 

With Kichesippi Natural Blonde …

Spicy Butter Chicken, Mango Chutney & Jasmine Rice

Serves 6

Ingredients

1 cup butter, divided
1 onion, minced
1 tablespoon minced garlic
1 (15 ounce) can tomato sauce
3 cups heavy cream
2 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon garam masala
1 1/2 pounds skinless, boneless chicken breast, cut into bite-sized chunks
2 tablespoons vegetable oil
2 tablespoons tandoori masala

Method

Preheat oven to 375 degrees F (190 degrees C).

Melt a few tablespoons of butter in a skillet over medium heat. Stir in onion and garlic, and cook slowly until the onion caramelizes to a dark brown, about 15 minutes.

Meanwhile melt the remaining butter in a saucepan over medium-high heat along with the tomato sauce, heavy cream, salt, cayenne pepper, and garam masala.

Bring to a simmer, then reduce heat to medium-low; cover, and simmer for 30 minutes, stirring occasionally. Then stir in caramelized onions.

While the sauce is simmering, toss cubed chicken breast with vegetable oil until coated, then season with tandoori masala and spread out onto a baking sheet.

Bake chicken in preheated oven until no longer pink in the center, about 12 minutes. Once done, add the chicken to the sauce and simmer for 5 minutes before serving.

Serve with Jasmine rice (also known as Thai fragrant rice) – a long grain variety of rice with a nutty aroma and a spoonful of Mango Chutney (we found a good recipe on The Daring Gourmet)

1855 is a food friendly beer, yet when we asked the Kichesippi team and the Savvy Brew Crew & our Cheese Sommelier – Vanessa, nibbling on some artisan cheese came to mind.  Yes, beer & cheese is the new combo. If you want to add some ‘meat’,  cold cuts & charcuterie would be perfect.

Consider picking up a couple of these cheeses…

Spanish Manchego cheese – the older the better!

Vanessa loves Canadian cheese, so her top picks are:

A sharp, crumbly & firm cheeses such as: Avondale Cloth Bound cheddar from PEI (in photo at left)

With Heller Highwater …

Grilled Bratwurst & Sauerkraut

From Serious Eats
Serves 4

Ingredients

2 cups lager-style beer
3 tablespoons whole grain mustard
1 (1 pound) package sauerkraut, with juices
6 sprigs thyme (optional)
2 pounds bratwurst sausages
Buns and Dijon mustard for serving

Method

Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes.

Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate.

Combine beer, mustard, and sauerkraut in a 10-inch square disposable aluminium pan. Alternatively, construct a tray out of a double layer of heavy duty aluminium foil, 10 inches square, with sides about 2 inches high. Stir until mustard is broken up and mixture is homogenous. Add thyme sprigs. Nestle sausages into sauerkraut.

Place tray on hot side of grill and cook until simmering, about 4 minutes. Slide to cooler side of grill. Cover grill with vents over the sausages. Cook with all vents open until sausages register 140° to 145°F on an instant read thermometer, about 20 minutes, turning once in the middle.

Remove lid. Using tongs, remove sausages from sauerkraut and place directly on cooking grates over hot side of grill. Cook, turning occasionally, until well browned and crisp, about 3 minutes total. Return to sauerkraut. Toast buns over hot side of grill if desired. Serve sausages with buns, Dijon mustard, and sauerkraut.

NEWS: Savvy Hip Hops is Ontario’s first craft beer of the month club

Ottawa-based Savvy Company just made it easier for Ontario’s beer enthusiasts to enjoy the growing number of craft beers being produced in Ontario. On January 30, 2014, Savvy Company has launched Ontario’s first craft-beer-of-the-month club that delivers craft beers to your doorstep. Known for its wine expertise and innovative wine events, Savvy Company has expanded its business and is working with craft breweries to create innovative ways to reach beer-thirsty Ontarians.

Savvy Hip Hops beer of the month club“The craft beer industry in Canada is exploding and breweries are winning national and international competitions,” says Savvy Company president & sommelier Debbie Trenholm. “We run a very successful Savvy Selections wine of the month club and many of those subscribers, as well as clients, have asked for a similar club for beer. We seize every opportunity to wave the Canadian flag, so launching Savvy Hip Hops was natural.”

Every month Savvy Hip Hops subscribers will receive the Savvy Hip Hops Taste Case delivered directly from the brewery to their home or office on the Friday closest to the 24th (as in 2-4) of the month.  The Taste Case will be an assortment of bottles, cans & growlers of beers on tap and in tank at the featured brewery. The beers will be selected by a team of beer industry bloggers, media & craft beer enthusiasts who are part of the ‘Savvy Brew Crew’.  In collaboration with the featured brewmaster, together they will create a compilation of beers that are only available at the brewery or rarely found at the Liquor Control Board of Ontario (LCBO) and The Beer Store.

To further the enjoyment of the beers in the Savvy Hip Hops Taste Case, subscribers will receive the monthly ‘Beer Backstory’, a mini-magazine including a relaxed interview with the brewmaster and brewery owners, trivia about the featured beers, the brewery’s staff favorite foods to enjoy with the selected beers and recipes with the beers as the ingredients or to serve with a pint.
