Need wine for Thanksgiving turkey or ham? Here’s a wine shopping list

Around about two years ago, my husband Doug  &  I celebrated – we are both Savvy Sommeliers – our anniversary in Napa Valley in California.  You can imagine how excited I was when I saw that the LCBO Vintages release for October 13 features wines from Napa – it couldn’t have been timed better!  What caught my attention when reading the various reviews of the featured Napa wines, were the recurring wine critics comments about the region’s slope of the vineyards and climate.

The hilly ups & downs of growing grapes in Napa Valley

The Napa valley is a relatively small wine region but has huge temperature variables. This is on account of the San Pablo Bay and valleys that run east-west forming wind tunnels for wind and fog drawn in off the Pacific. The mountains also block cold winds and shield the grapes so that they can ripen. Winegrowers prefer north-facing slopes so the ripening process is slowed and lengthened and the grapes do not get sunburned. Not surprisingly, wines will be strikingly different from grapes grown at 2500 feet from those grown at 500 feet. Winegrowers have to cope with 3 different climates in the valley – might this challenge alone affects the steep prices of Napa wines?

Micro-climates of Burgundy & Piedmont

Moving away from California, this release features wines from Burgundy (France) and Piedmont (Italy), wine regions considered to have micro-climates. Similar to California, viticulturists (winespeak: grape growers) plant vines on southern facing hilly slopes to increase the vigour in growth for leaves & shoots. Leaves are critical for creating sugar in the grapes and also provide a canopy from the intense sun. Two of Italy’s most renowned wines – Barolo & Barbaresco – come from Piedmont and one wine in this release for the big splurge is the Pertinace Nervo Barbaresco 2009 at $39.95 (Vintages# 344705). This wine comes from the village of Treiso which has the highest vineyard sites in Barbaresco and the altitude has given the region the reputation of creating finessed Barbaresco.

With Thanksgiving feasts this weekend, I have purposely selected wines that I think would be fabulous to serve with turkey or glazed ham. These wines will be in my shopping basket & will be enjoyed at our Thanksgiving table.

William Hill Chardonnay 2012

Napa, California, U.S.A.
$27.95  (Vintages # 988840)  13.7% alcohol

These grapes are grown in a vineyard set on benchland off the valley floor located along the unspoiled Silverado Trail. The hills have southwestern exposure to allow the grapes to bask in abundant sunlight.  I am back in love with Chardonnay, time for a change from all the Rosés and Sauvignon Blancs that I have been sipping all summer. This white wine is pale golden in colour with aromas of baked pears and nuts. For those who like to match  buttery spuds and gravy on turkey breast with a full bodied white wine, this Chardonnay is meant for you. Rich, delicious and creamy with tropical fruit flavours and faint vanilla sweet spice on the finish. A fresh, elegant Chardonnay for any occasion.

 

Cygnus Brut Nature Reserva Cava

DO, Spain, Méthode Champenoise
$19.95 (Vintages # 352856)  11.5% alcohol

A big broad citrusy nose that bursts of bubbles, and teases the palate. This sparkling wine is so fresh and will make a wonderful appertif before the big bird!  Tastes of green apples and lemons, white grapefruit with a hint of minerality and stone. Very refreshing, and could easily take you from appertif through to pumpkin pie.

 

Angel’s Gate Riesling VQA 2010

VQA Beamsville Bench, Niagara Peninsula, Ontario
$13.95 (Vintages #160523) 12% alcohol

A glimmery pale coloured white wine to serve with appetizers or to complement a Thanksgiving table. I think all Angel’s Gate wines are heavenly! Aromas and flavours are slightly floral, minerally, soft and slightly spritzy. Slightly off-dry, but more of the latter, with nice stone fruit tastes. A classic Niagara Riesling white wine that makes a perfect appertif, or afternoon sipper.

 

 

Heitlinger Mellow Silk Pinot Noir 2011

Qualitatswein, Germany
$16.95 (Vintages#344697)   13.5 % alcohol

Of all the wines in this release, I am most especially excited about this red wine. I would never think of Germany as Pinot Noir country, nor does this tend to be my go to grape, however I wanted a red wine for our Thanksgiving dinner and this Pinot Noir will be perfect.  A lovely light cherry red in colour with aromas of dark toast and raspberry.  Plenty of red berry fruit and they don’t put “SILK” in the name of this wine for show. It is silky smooth and mellow with slightly grippy tannins but easy sipping. I think I will throw a few dried mushrooms in my turkey stuffing to enhance this match.  This is a very pretty Pinot at this amazing price.

 

Chateau De Saint-Lager Brouilly 2011

AC, France
$19.95 (Vintages 330027)   13% alcohol

The Beaujolais region is located in east central France and although qiute distinct is considered a part of Burgundy. This Beaujolais is red raspberry in colour, medium weight flavours of red berries, pinch floral, light cassis, a little tart with just enough acidity to cut through rich foods. This light to medium bodied red wine has some spicey depth with personality and an excellent choice for the folks out there who prefer red wine with their Thanksgiving feast. There is a certain delicacy but this red wine is smooth, refined and refreshingly long.

Tuscany & Thanksgiving wines at Vintages – this shopping list is under $100

Italy’s Tuscany wine region is the main attraction in this weekend’s LCBO Vintages release (beginning on Sept 28th). The classic ‘big three’ red wines crafted from the native grape variety, Sangiovese—Chianti Classico, Vino Nobile di Montepulciano, and Brunello—and a number of blended red wines, usually classified as IGT  (Indicazione geografica tipica), that bring to the palate the impact of classic French varieties such as Cabernet Sauvignon and Merlot.

Explore the world of Super Tuscans

Some may know the story of how the Maremma, the coastal region of Italy on the Mediterranean, was the birthplace of what were called the ‘Super-Tuscans’. Mario Incisa della Rocchetta planted his first vineyard in the area with the intention of producing some Bordeaux-style red wines for his personal consumption. The wine he called ‘Sassicaia’, commercially released in 1968, along with Antinori’s Tignanello, launched the Super-Tuscan phemonema.

Over time, as this style of wine became more popular and spread more broadly through many Italian wine regions, the regulations were expanded to include the designation IGT to incorporate these unique wines into the standards of Italian wine law. These wines come from a specific geographic area, meet specified quality standards, and may also bear the name of the grape varieties from which they were produced. As an example of the longstanding presence of non-native varieties in Italy’s winemaking history, the Capezzana ‘Barco Reale’ di Carmignano (a great value) comes from a DOCCarmignano—which has always required the inclusion of Cabernet Sauvignon in its blends. To quote the September 28 LCBO Vintages magazine, the IGT style ‘embodies the interplay of tradition and innovation that has always been at the heart of Tuscan winemaking’.

Give Thanks with Great Wines 

With Thanksgiving fast approaching, this release brings a cornucopia of wines to choose from. There are Rieslings from Ontario, Alsace and Germany; Chardonnay from California and Australia.  If you are prepping your Thanksgiving feast early, here are my top picks at the table; a richly flavoured Merlot from Ontario’s Angels Gate; the fabulous ‘Goldeneye’ Pinot Noir from Duckhorn or the classic Mercury of Domaine Faiveley; and Cascina Gilli’s clean yet concentrated Barbera d’Asti. For a Canadian sweep at the Thanksgiving table, consider starting with Sumac Ridge Steller’s Jay Sparkling Brut, moving to a choice of Angel’s Gate Mountainview Merlot or Tawse ‘Sketches of Niagara’ Riesling for the main, and then consider the hedonistic pleasures of Château des Charmes’ Vidal Ice Wine for dessert!

From the general release, I’m putting a focus on cellarable wines, including Paul Hobbs’ always impressive, concentrated ‘Crossbarn’ Cabernet Sauvignon, a great value Bordeaux—Château les Hauts de Palette—and from the Okanagan, Burrowing Owl’s 2010 Merlot.

Nottola Vino Nobile di Montepulciano 2009

Absolutely delectable, this fine red wine shows restrained aromas of red fruit, spice, earth and delicate floral notes. Dry, medium-full bodied and satiny in texture, the wash of intense red fruit is nicely offset by a spine of lively acidity and subtle tannins. Elegantly integrated oak offers a spicy note that accents the earthiness that persists on the finish. Enjoy this red wine now and over the next few years.

 

Lapostolle ‘Cuvée Alexandre Apalta Vineyard’ Cabernet Sauvignon 2011

Colchagua Valley, Chile
$24.95 (Vintages #947929) 14.0% alcohol

Deep purple, this powerful red wine produced from organic grapes offers great complexity and layers of aromas and flavours, including cassis, mint, spiced flowers, dried herbs and tobacco. Dry, full bodied, displaying gripping tannins and clean acidity, it has a firm base from which to showcase ripe, concentrated red and black fruits. Hints of sweet spice and pepper, along with a whiff of espresso linger on the finish. Cellar a further year or two, or decant and serve with rare red meats.

 

Graffigna ‘Centenario’ Late Harvest Malbec 2012

San Juan, Argentina
$14.95 (Vintages #322719) 12.5% alcohol

Deep ruby, this is a delightful incarnation of Malbec, offering tantalizing aromas of dried cranberries and black cherries, ripe dark berries and hints of smoke and spice. The jammy red fruit is attractively balanced with a backbone of clean acidity, notes of spice add interest, and there’s freshness on the finish. Serve this red wine with flourless chocolate almond cake.

 

Tawse ‘Sketches of Niagara’ Riesling 2012

VQA Niagara Peninsula, Ontario
$17.95 (Vintages #89029) 10.0% alcohol

Light-medium bodied and almost transparent, this is a fine value white wine bursting with aromas of nectarine, Japanese pear and lemon/lime. The sensation is one of subtly-wrought balance, the flavours suggesting the sweetness of lemon curd, along with lime, crisp apple and a touch of mineral.

 

Dry Creek ‘Heritage’ Zinfandel 2010

Sonoma County, California
$21.95 (Vintages #574491) 13.5% alcohol

Inky and deep, this absolutely fabulous Zin offers rich blueberry and currant aromas, exotic spice notes, vanilla, earth and savoury toasty oak. Dry, full and rich, the dark fruit is succulent and spicy, the oak well integrated. The subtle structure brings great balance and harmony to the whole and delivers a surprisingly clean freshness on the big, fruity finish. Wow! You’ll want to stock up on this red wine!

Bordeaux invasion at the LCBO

There’s nothing like a new Vintages release to chase away the post-Thanksgiving blues. The left-overs are gone as are the rellies and friends that made it all so special. But the thoughts of new Bordeaux coming to town just perks me right up and makes me long for a huge wine cellar.

With approximately 7,000 châteaux and 21 appellations it is not surprising that the Bordeaux region of France is the world’s major wine industry capital. Appellations in France are similar to our wine regions in Canada. For those of you who have not been to France, the Bordeaux region is located in the southwest part of France on the Atlantic coast.

Bordeaux produces quality and quantity red and white wines. The red wines are mostly blends from grapes such as: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Malbec and even Carménère. White Bordeaux is made from Sauvignon blanc, Semillon and/or Muscadelle grapes. It’s hard to go astray in your choices with these crème de la crème grapes and your choices will be more price dependent than anything else-as the quality is always there.

This release made me think of some of my favorites that I had not picked up for a while so it was a wonderful reminder of how well some red Bordeaux pair with beef and lamb and the white’s with shellfish.

Well this is not the first time that reading about these new releases made me want to jump on a plane, but since it will not be for this year, I’ll have to be content with picking up some new bottles to stash away for when it gets really cold.  I hope you will join me.

Chateau Toumilon Blanc 2009 France
$16.95 (Vintages #314864) 12.5% alcohol
This is such a light easy sipper, pale straw yellow, mild citrusy aromas with light – medium soft textures in the mouth. I got some delicate flavors of pears in this bone dry white wine and it is just slightly acidic with some minerality on the finish.  If anyone is looking for a new “house” wine, I’d suggest you pick up a bottle of this. It slips down pretty easy and does not have a lengthy finish but it sure sends you back for more.  It also won a Silver Medal (Best in Class) at the International Wine & Spirit Competition, 2011. I was not the only one that liked this wine!

Three Saints Chardonnay 2009
Santa Maria Valley, Santa Barbara,U.S.A.
$20.95 (Vintages #297531) 14%
The “Three Saints” signify the three valleys were the Dierberg family grow their grapes. These Chardonnay grapes are grown in the coastal Santa Maria vineyard; the other vineyards are the Santa Rita Hills and the Santa Ynez Valley where Pinot Noir and Syrah are grown. The wine has inviting aromas of ripe melon, yellow apples and a little citrus that carry through leaving a little honey and roasted nuts on the aftertaste. A medium bodied white wine that is crisp and refreshing with rich tropical fruit flavors. Lovely on it’s own or with some turkey pot pie with flakey pastry, it would be scrumptious.

Angel’s Gate Mountainview Merlot 2010

$18.95 (Vintages #299172) 12.5% alcohol
Angel’s Gate Winery is on property that was once owned by the Congregation of Missionary Sisters and in 1995 the land was converted into a vineyard. I have found all of the Angel’s Gate selections to be pretty heavenly. The winery itself has historic, distinct gables and a tower reminiscent of a church. Think dark cherries in colour with tastes of violets, strawberries a little chocolate cake and a pinch of earth. Smooth and supple, rich in texture and tannins and all you need is some Prime Rib for a first class dinner.

 

Rolf Binder Heinrich Shiraz/Mataro/Grenache 2008
Barossa Valley, South Australia
$24.95 (Vintages# 90258) 14% alcohol

For those of you not familiar with the Mataro grape, it is also known as Mourvèdre and originated in Spain. A lovely dark rich violet color with aromas of sweet dark ripe berries, blueberries and plums that follow through with a fairly hefty mouth feel. It has lots of juicy sweet spice and peppery flavors that come through on the aftertaste. This red wine is smooth and complex and would pair it with any red meat but it’s a yummy sipper on its own.

AC Fronsac, Bordeaux, France
$16.95 (Vintages #303859) 14% alcohol
The Bordeaux in this release are in a class of their own and for the price this shows beautifully. Lovely dark cherry color, aromas of red berry fruits and a little tobacco. The flavors of this red wine follow through on the palette, medium bodied with decent acidity and a tad earthy.  Sheer class.

Niagara’s 20 Valley wineries are coming to Ottawa!

We are at it again!  The Savvy Team is excited to announce…

Winemakers and winery owners from Niagara ‘s Twenty Valley wine region – located between the Niagara Escarpment and Lake Ontario – are coming to Ottawa to raise a glass to this year’s outstanding harvest and to pour their wines at their  first ever Taste & Buy event.

“This is the first time the wineries of Niagara’s Twenty Valley have gone ‘on tour’ as a group to showcase their finely crafted wines”, said Twenty Valley Tourism Association President and winery owner Sue-Ann Staff.

“We are delighted to pour our elegant whites, robust reds and other specialty wines to the receptive Ottawa wine lovers. We are excited to work with the Savvy Company knowing their outstanding history, commitment to quality and extreme competence of putting together a fabulous tasting in Ottawa. Ottawa has a particular appeal to the wineries of Niagara’s Twenty Valley.  We know the people in Ottawa love great wine.  And we happen to make some of the best wines in Ontario.  Bringing the two together can only provide for an evening of great success.”

Twenty Valley encompasses the rural towns of Beamsville, Vineland and Jordan. Their wines continue to be recognized and awarded around the world for outstanding quality and for the talent of their winemakers.  Wine enthusiasts in Ottawa have the opportunity to taste the Twenty Valley terroir when winemakers and winery owners come to the nation’s capital.

The Taste & Buy event hosted by Savvy Company is taking place on Friday October 19 at 7p.m. in the Panorama Room on the 2nd floor of the National Arts Centre.

$55.00 per person if purchased before October 10, 2012 and will be $60.00 after.

All wine lovers are invited to sample over 50 wines while they meet grape growers, winemakers and winery owners.  Consumers will learn about the Twenty Valley wineries, their vineyards and may discover some favourite new wines.  At this Taste & Buy event, consumers will have the opportunity to purchase wines that are not available in the LCBO.  Free shipping by courier is available with the purchase of a case of wine.

Celebrate Friday the 13th with this heavenly drink

There is no better way to set the mood of a dinner party than with the pop of a cork of a bottle of bubbly!

This sparkler from Angels Gate Winery perched atop the Niagara Escarpment is made with 100% Pinot Noir grapes.  In the wine world, a sparkling of this type is referred to as ‘Blanc de Noirs’. Since the juice was left in contact with the skins of the Pinot Noir grapes for about 1 hour after the grapes have been crushed & pressed, the wine takes on a light pink colour.

This is the first sparkling wine made at Angels Gate by Australian winemaker Philip Dowell … now he makes 3 bubblies! And with the winery celebrating its 10th anniversary this year, I am certain that there will be lots of corks flying to mark the occasion!

CANADA’S WINERIES DELIVERED TO YOUR DOORSTEP

Character and the landscape are two features that wine producers spend a lot of time deciding upon, not only for their wineries, but also for their wines. A visit to Angels Gate Winery on Mountainview Road at the base of the Beamsville Bench in Niagara, is the best way to see that where a wine comes from is just as important as how it is made. Not only are the views and the mission-style architecture breathtaking and eclectic, but very unique – a quality that can be experienced and appreciated in all of Angels Gate wines.

Phillip Dowell, the winemaker, is the planner, procurer, and producer of Angels Gate’s Devilishly Good Wines produced behind the walls of the mission-style winery that signifies Angels Gate. Coming from extensive winemaking experience in the Yarra and McLaren Vales of Australia, Philip is very aware of the importance of not losing your identity in the over-production of wines and is very thankful to be the driving force behind the viticulture (Wine Speak for growing of grapes), the viniculture (wine speak: making the wine) and the market profiles of all the wines produced at Angels Gate.

The group of wine lovers that established Angels Gate gave Phillip the creative power and the on-site responsibility needed to produce and develop unique wines on a unique property. “It’s like owning your own winery. I get to keep what is good and develop our future”, he explains.

Three of Phillip’s one-of-a-kind wines are profiled this month as Savvy Selections. Keeping in line with the unique character of Angels Gate, this month’s tasting panel of Wayne, Lorraine, Mitch and myself met on the deck of a sailboat to taste this month’s Selections offerings (Hey, where you are is very important to what you are tasting too!).

We are excited to introduce you to this month’s Savvy Selections – ready for summertime enjoyment:

Angels Gate Winery

Unique and Elegant
On the Beamsville Bench overlooking Lake Ontario, the Congregation of Missionary Sisters of Christian Charity erected a convent on the site that is now the setting for Angels Gate Winery. When the property was converted into a vineyard in 1995, the “missionary style” of construction was not lost on the group of entrepreneurs responsible for its conversion and development.

Retaining the character of the property has spilled over into the winemaking at Angels Gate as well. The people responsible for the production of wines still practice traditional winemaking techniques in an effort to produce great wine, but traditional approaches must produce unique wine that is elegant and memorable, not just something different. This mantra is especially true for the winemaker, Phillip Dowell.

Transplanted from Australia
Phillip comes to Angels Gate after extensive experience in Australia where he learned the value of using New World (wine speak: all wine-producing countries outside of the Mediterranean) technologies and traditional winemaking techniques. “The key is to integrate these two influences and create a style that is unique… in our case uniquely Angels Gate”, he explains. According to Phillip, that style centres on ‘elegance’.

He claims that, “not over-reacting… being patient with many of the natural processes of grapes grown on the property” allows wines of “delicate balance, finesse and distinct structure” to evolve.

No better example exists than the Sussriesling produced by Angels Gate, a spectacular, semi-sweet Riesling created with a combination of fermented and non-fermented juices. This gives an unique experience of light thirst-quenching wine at an extremely reasonable price, produced from some of the earliest Riesling vines planted in Ontario.

Groundbreaking
Under Phillip’s direction Angels Gate has been planting Malbec, used in the Angels Red III – one of your Savvy Selection this month. Presently, the growing of Malbec is rare in the Niagara Region, but it demonstrates the uniqueness and diversity of Angels Gate products.

As well, Selections subscribers were offered (and you can still contact us to arrange a special shipment) the unique Archangel Sauvignon Blanc Sparkling which comes highly recommended by the tasting panel. This is a bubbly made in the traditional method (wine speak: made in the same process as Champagne) that our Sommeliers thought that it tastes like a well-made Spanish Cava wine (a Spanish sparkling) with its dry, thirst- quenching, textured experience, which, like many other Angels Gate wines, makes it unique.

The Angels Gate team is constantly breaking new ground. In 2010, a significant planting of Pinot Gris is taking them directly into the groundswell of popular white wine drinkers who are enjoying Pinot Gris (aka Pinot Grigio).

A preview of the winery’s future success at producing white, creamy-textured wines can be experienced in this month’s Old Vines Chardonnay, a product of 40-year-old vines that have developed the ability to reach very deep into the clay and limestone soil for rich nutrients capable of yielding full flavours and textures.

Exporting Excellence
Both Phillip and A.J. McLaughlin (Angels Gate Sales and Marketing Manager) feel that the Ontario market is presently full of dynamism with plenty of expansion. They are looking to take the spirit and their wines beyond Ontario’s borders – across Canada and recently established their first exporting venture into the United States. They both feel they produce “great wine at exceptional value” and expansion will increase demand which will increase diversity and quality as long as they maintain the quality of winemaking. Keeping their eye on “elegance” of their wine and winery is a step in the right direction. Maintaining elegant wines will be the next challenge… one that they feel for certain will be met.

Angels Gate Old Vines Chardonnay VQA 2006 $23.95

100% Chardonnay grapes are used in this wine. The 40-year-old vines are hand-picked and the juices are both fermented and aged in barrels on the lees (wine speak: the yeast is left with the wine in the barrel as part of the winemaking process). All of this produces a smoothness and rich creamy texture.

Savvy Sommelier Tasting Notes:Butter is the first impression on the nose followed by tropical fruit. The palate is bathed in butterscotch, caramel popcorn, roasted nuts and a hint of herb. A warm, lingering mid palate produces a long coffee bean and roasted nut finish. Smooth and elegant. Savvy Sommelier Wayne Walker compared this to some good California Chardonnays and felt it would be very versatile, but wonderful with shellfish. What do you think?

Suggested Food Pairing:Seafood, and chicken dishes with white cream sauce would be great match. Brie and other soft, young white cheese will pair well too. There is enough tannic structure and acidity to make this a good choice for roasted pork as well. Its versatility would extend into creamy pastas and sticky rice dishes too. Grilled foods should be limited to white meats and fish.

Cellaring:Drink now at 12C to 15C. Cellar for 3 to 5 years to enrich the texture and enhance the elegance.

Angels Gate Cabernet Sauvignon VQA 2005 $19.95

Harvested from two properties on the Angels Gate estate, this wine is 100% Cabernet Sauvignon that has spent over 1 year aging in French oak barrels. Our Savvy Sommelier Debbie Trenholm loved the spice finish of this wine and declared ”this would be a hit with anything off the BBQ.”

Savvy Sommelier Tasting Notes:Spices, dark fruit and cedar on the nose are deepened by chocolate and vanilla on the palate. Good tannins and a softened acidic structure bring up the fruit in the mouth and lead into a tobacco and spice finish that lingers.

Suggested Food Pairing:Hearty dishes like grilled red meats, beef and tomato pastas, aged cheeses, stews are good matches for this wine. Spicy poultry and beef, wild game, sausage, pate and blue cheese dishes are other possibilities.

Cellaring:Could be cellared for 3 to 4 years, but it tastes great now at 17C to 20C.

Angels Red III VQA 2007 $35.00

A smooth, elegant and unique blend of Cabernet Sauvignon (67%), Malbec (22%) and Merlot (11%). Blending is where winemakers showcase their artistic vision with consumers. This blend certainly does not disappoint! It is able to deliver intensity with finesse and still generate elegance. Fully aged varietals (wine speak: for grape types) are removed at the end of their own fermentation and aging processes so that grape specific techniques can be used to fully realize the potential of each separate wine. Then they are blended through trial and error to create the final wine.

Savvy Sommelier Tasting Notes:This release is almost everything anyone could want in a Red Blend. It is delivered with finesse, richness, balance and length. Dark berries and cherries, chocolate, vanilla, toast, and sweet peppers are part of both the nose and the palette in this wine. These experiences are completed by soft, sweet wood, honeyed texture and a long, sweet, smoky finish transported on a medium to full body. Good acidity and elegant tannins complement a very drinkable and memorable wine.

Suggested Food Pairings:Filet Mignon, Roast Lamb with Garlic and Rosemary, Teriyaki Beef and other grilled red meats are great choices for this gem. Popular choices might include Gourmet Thin Crust Pizza, Mushroom dishes and Gourmet Hamburgers. Bring on the Gorgonzola cheese!

Cellaring: Drink now or cellar for up to 5 years.

OPTIONAL WINE: Archangel Sauvignon Blanc Sparkling VQA 2008 $19.95

This wine is this month’s optional selection that can be ordered by calling Debbie at 613-SAVVYCO (613-728-8926) or debbie@savvycompany.ca. The tasting panel began by tasting this wine and had to remind themselves to move on to the other selections because it was so light and dry and summertime drinkable.

The Archangel Series are the first of the grapes to be harvested each vintage at Angels Gate. It is very unusual to find a sparkling wine made of 100% Sauvignon Blanc outside of New Zealand.

Savvy Sommelier Tasting Notes:A great palette cleanser and thirst-quencher, it is fruit forward, zesty and effervescent. Well-balanced, it can be drunk on its own and enjoyed for its melon, citrus, ripe apple and pink grapefruit notes that are tempered by the subtle sweetness of lime. It is balanced and, like all the other Angels Gate wines, elegant in its very delicate profile.

Suggested Food Pairings:Chill & enjoy.If you want to have with food, we would recommend fresh vegetable appetizers, green salads, Thai shrimp rolls or seafood would be delicious. Creamy cheeses like Havarti are perfect for this type of wine. Don’t forget everyone’s favourite… goat cheese!

 

~ RECIPES TO ENJOY WITH YOUR SAVVY SELECTIONS ~

With Angels Gate Old Vines Chardonnay…

Grilled Sweetbread and Chicken Thigh Skewers

When you visit the winery, plan to nosh on the picturesque patio and say hello to Chef!

Serves 4

Ingredients

4 chicken thighs

1.5 lbs veal sweetbreads

2 cups white wine

2 cloves garlic

2 Tbsp canola oil

2 carrots

2 celery stalks

2 cups salt water

½ cup Dijon mustard

1 tsp sea salt

Fresh herbs (thyme, bay leaf, peppercorns, rosemary, majoram, sage)

Method

1.Marinate thighs in white wine, crushed garlic, canola oil and thyme for 3-10 hours.

2.Roast the seasoned thighs in a 400F degree oven until internal temperature reaches 170 degrees.

3.Gently poach sweetbreads in salted water, carrots, celery, onion, bay leaf, thyme and peppercorns. They should appear pink, but opaque in the middle. Do not overcook or boil. Check frequently. Once done, plunge into ice water bath.

4.Once cooled, remove outer membrane and exposed veins with paring knife while breaking into chunks equal to size of chunks for chicken thighs..

5.On long metal skewers, alternate chicken and veal pieces so they are touching but not squashed together.

6.Brush the meat skewers with Dijon and sprinkle with favourite remaining herbs. Place finished skewers in refrigerator until grill is hot and ready. Season with sea salt and pepper. Cook on grill moderately until meats are coloured and opaque.

With Angels Gate Red III…

Bodacious Burgers
A family favorite recipe from the kitchen of Carly Khonmen Wayne’s daughter

Serves 8

Ingredients

2 lbs lean ground beef

½ lb bulk Italian Hot sausage

½ large red onion, chopped

2 Hot chili peppers

3 cloves garlic, minced

¾ lb Muenster Cheese

1 egg

1 Tbsp Worcestershire sauce

1 tsp chili powder

Salt and pepper to taste


Method

1.Preheat outdoor grill to medium-high heat and lightly oil the grate.

2.Mix ground beef, sausage, onion, chili pepper, Muenster cheese, egg, Worcestershire Sauce, and chili powder in a mixing bowl until evenly combined. Season with salt and pepper and mix again. Form the meat mixture into 8 patties.

3.Cook on the grill until burgers are no longer pink in the centre, about 7 minutes per side. Centre temperature should be about 70C.

4.Serve with Angels Gate Red III at 18C.

With Angels Gate Archangel Sauvignon Blanc Sparkling….

Sautéed Shrimp
A family favorite recipe from Wayne’s kitchen
Serves 4-6 as an appetizer

Ingredients

1 cup butter

2 large cloves garlic, minced

2 to 3 lbs raw jumbo shrimp, shelled and deveined

2 Tbsp dry sherry or white wine

1 cup heavy cream

Salt and pepper to taste

Chopped parsley

Method

1.In skillet, heat butter, cook garlic over medium-low heat until soft.

2.Add shrimps and cook until they turn pink.

3.Add sherry (or wine) and simmer for another minute.

4.Add cream and salt and pepper to taste. Garnish with chopped parsley if you wish.

5.Serve with rice using toast or biscuits as edible spoons or just serve on the toast or biscuits themselves.
