
Mushroom risotto is a cherished dish at Savvy Company. It’s a dish that celebrates the bounty of the season, featuring an array of fresh mushrooms and garden herbs. Leftovers, though a rare occurrence, are just as delectable as the initial serving.
Quality mushrooms are the key to this recipe’s success, making it an autumnal delight. You can experiment with various mushroom varieties and even add a dash of truffle oil for an extra layer of flavour. The richness of the dish, combined with the earthy essence of mushrooms, creates a symphony of taste that is simply irresistible. Ingredients:
8 cups chicken or vegetable broth
1 tbsp extra virgin olive oil
2 cups arborio rice
1 medium onion, finely chopped
2 tbsp butter, divided
2 cloves garlic, minced
3 cups cremini mushrooms, chopped
½ cup white wine
1 cup freshly grated parmesan
2 tbsp chopped fresh parsley
Bay leaf
Thyme leaves (fresh or dried)
Salt & Pepper
Directions:
1. Heat the broth in a medium saucepan with the bay leaf.
2. Put your rosé in the refrigerator to chill.
3. In a large pot or Dutch oven, heat oil on medium.
4. Add onion and cook, stirring often, until translucent (about 5 mins) Add 1 tablespoon butter, garlic, mushrooms & thyme. Cook until the mushrooms have softened & are golden-brown (about 4 mins). Season with salt & pepper. Remove mixture from the pot & set aside.
5. Melt remaining butter in the same large pot and add the arborio rice, stirring quickly. Cook until the grains are slightly golden and smell a bit toasty (about 2 mins). Add the wine and cook until the wine is mostly absorbed.
. Add 1 cup of the hot broth. Stir constantly and cook until the rice has mostly absorbed the broth. Add remaining broth 1 cup at a time, continuing to allow the rice to absorb the broth each time before adding more. Stir & cook until the risotto is al dente and creamy.
7. Add the mushroom & onion mixture into the rice.
8. Stir in the parmesan and sprinkle parsley on top.
9. Serve warm and season with salt & pepper taste.
