An Ontario Sparkling Rosé Wine Defined by Innovation and Made for any Occasion.
Crafted in the Niagara Escarpment, this sparkling rosé wine starts with a unique winemaking technique: Riesling grapes dried using the traditional Italian Appassimento method. By gently air-drying the grapes before pressing, the winemaker concentrates flavour and aroma, creating a more expressive base wine.
Then add in a small addition of Malbec (1%) to bring a subtle red fruit character and delicate colour, resulting in a rosé that is both fresh and layered.
Made using the Charmat method, this wine offers a lively and persistent effervescence, enhancing its bright, fruit-forward style.
The balance between crisp acidity and vibrant fruit makes this sparkling rosé incredibly approachable, while the winemaking technique adds a subtle depth that keeps it interesting.
