Winemaker Tanya Mitchell takes an intriguing approach to this Hawk’s Flight Reserve Cabernet Sauvignon, combining two techniques with Italian roots: Ripasso and Appassimento. Appassimento concentrates flavours by allowing grapes to partially dry, while the Ripasso technique adds further richness and complexity. Together, they give this Ontario Cabernet Sauvignon its concentrated fruit, generous texture and depth.
