Made the Classic Canadian Ice Wine Way: The 100% Vidal grapes were harvested naturally frozen on the vine in mid-December at temperatures between -10°C and -13°C. Fermentation continued until mid-February, followed by natural cold stabilization outdoors—a traditional process that concentrates flavour while preserving the freshness that makes Canadian Icewine so distinctive.
