As with most years, the Pinot Gris grapes were the first to be harvested. It was deemed one of the great successes of the 2021 vintage. The fruit was harvested in late September under ideal conditions, allowing the retention of good acidity and structure before frequent bouts of rain started in October. This vintage was Barrel Fermented on lees (in contact with the yeast) in 500L neutral French oak puncheons for 6 months prior to assemblage and bottling.
