Indigo sparkling is made with a special selection of grapes grown in small lots from both the Rosehall Run estate as well as Nedelko vineyard in the Twenty Mile Bench located in Niagara. Rosehall Run owner & winemaker Dan Sullivan calls the Nedelko property his “vineyard away from home”.
This vintage was the first time he had access to the Riesling from Nedelko vineyards as well as Gewurztraminer grapes. This bubbly was made in the Charmat method, meaning the base wine was made, then the second fermentation took place in stainless steel tanks. Finally, to finish the sparkling wine, it was bottled under pressure.
This is the same method that Italian Prosecco or Spanish Cava sparkling wines are made.
