Nyarai Cellars was founded by winemaker Steve Byfield as a virtual winery in the Niagara Peninsula. Without vineyards of its own, Nyarai sources fruit from trusted growers across several Niagara sub-appellations. This approach gives Steve the flexibility to choose the best grapes from each season.
The winery’s small-lot, collaborative model has earned it a reputation as a respected independent Ontario wine project. For The Longing Cabernet Franc, fruit from three sub-appellations and three vintages was carefully blended to achieve both concentration and elegance.
Byfield’s dedication to Cabernet Franc reflects his belief that it has the potential to be a flagship grape for Niagara. The Longing captures that conviction with complex aromatics, layered flavours, and a graceful finish. It’s a wine to savour—not just to enjoy.
