Crafted by winemaker Derek Barnett, the Sparkling Sauvignon Blanc from Meldville Wines highlights the elegance of Ontario’s Lincoln Lakeshore vineyards. Grapes were harvested in late September from vines along the shores of Lake Ontario, where cool breezes preserve acidity and concentrate flavour.
After pressing, the juice was cold-settled and fermented in large oak barrels for added texture. The wine remained on its lees for several months before secondary fermentation using the Charmat method, capturing its natural vibrancy and fine bubble structure.
The result is a sparkling wine that perfectly reflects Niagara’s cool-climate character—bright, aromatic, and effortlessly refreshing. Zesty fruit, creamy texture, and mineral lift make it a standout among Ontario sparkling wines.
