At Fielding Estate Winery in Niagara, attention to detail in both the vineyard and cellar helps shape wines that are vibrant, expressive and easy to enjoy. For this Pinot Grigio, fruit was sourced from several vineyard sites across the Niagara Peninsula, allowing the winemaking team to build complexity by blending grapes harvested at different stages of ripeness.
When fully ripe, the Pinot Gris grape has a slight copper colour, so when Fielding’s winemaking team decided to keep the juice in contact with the skins after pressing, the result is a ever-so-slight salmon hue with vibrant citrus aromatics that make this wine so easy drinking. The juice was fermented at cool temperatures in stainless steel to preserve freshness and bright fruit character. The wine then rested briefly on light lees (yeast) to build texture and balance while maintaining its crisp profile.
Made with Pinot Gris grapes with a nod to the Italian crisp style of Pinot Grigio wine, whatever you call it, this white wine feels both refreshing and easy drinking.Â
