A Signature Niagara Red Blend Made to Age
Fielding Estate Winery has developed a distinctive house style with its Cabernet Syrah, bringing together Cabernet Franc, Syrah and Cabernet Sauvignon to create a structured yet expressive Niagara red wine.
For the 2023 vintage, each component spent approximately 14 months in a combination of new and older French oak barrels from selected coopers and origins. Rather than relying on a predetermined formula, Fielding’s winemaking team conducted a series of blind tastings before deciding which wines would come together in the final blend.
The result continues the style established in previous vintages: generous fruit, structure and complexity, with the ability to evolve beautifully in the cellar. Yet there’s no need to wait. Fielding designed this wine to be expressive in its youth too—simply decant it before pouring to let it open up.
And the judges certainly took notice. Fielding Estate Winery Cabernet Syrah 2023 earned Double Gold and a Lieutenant Governor’s Award at the Ontario Wine Awards, making this an award-winning Ontario red worth discovering.
