Crafted by Ev’s Eclectics, a virtual winery in Niagara-on-the-Lake, this wine reflects the creative vision of winemaker Mitchell ‘Ev’ McCurdy who brings both technical precision and a fresh perspective to every bottle.
This rosé is made using the traditional French saignée method, where Malbec and Cabernet Franc grapes naturally crush under their own weight, producing deeply coloured juice with enhanced flavour concentration. The wine is then barrel fermented in neutral oak using a pied de cuve, adding texture and complexity while maintaining vibrant fruit character.
This is a rosé wine that drinks more like a light red in spirit. It has weight. It has energy. And it stands up beautifully to food.
