Divergence Viognier 2021


Have you tried a Viognier wine?  Our Sommeliers love introducing this uncommon grape variety. Popular in France, Viognier wines are becoming popular – we are certainly doing our part to put them in the spotlight.

Divergence Wines is a virtual winery in Niagara.  Crafted in small batches, this white wine is ready to be served now or can be cellared a few more years to reveal even more complexity with time in bottle.

What would Divergence’s winemaker and owner Jeff Moote serve with this wine? “It pairs well with savoury poultry and fish dishes, and my favorite is a moderately spiced Pad Thai.”

This Viognier made by Divergence winemaker & owner Jeff Moote is exceptional.  To make this wine, he took the approach of hand picking only the best bunches in the vineyard and hand sorting the fruit at the winery.  The wine was then barrel fermentation at cool temperature, and extended lees aging (winespeak: yeast contact) all to create the delicate texture & body of this white wine. Sweet fruit and floral aromas are followed by a rich and creamy palate.
