The “One” marks the beginning of a new sparkling tradition for Divergence Wines, a boutique Niagara producer founded by Jeff Moot, known for his passion for crafting small-lot sparkling wines with precision and patience.
Made from Pinot Noir and Chardonnay, a portion of this wine was fermented in neutral French oak to enhance texture and subtle richness. After 28 months of lees aging, it was finished with a 5 g/L dosage, adding just enough roundness to balance its crisp acidity. The result is an elegant sparkling that reflects both Niagara’s cool-climate terroir and Moot’s meticulous winemaking style.
