This is a classic Ontario Riesling! It has become a signature wine from Cave Spring Vineyard.
Pour a glass and enjoy the light yellow in colour with aromas of ripe yellow plum, Meyer lemon, fresh custard and vanilla bean, with hints of marjoram, orange peel, cut grass and anise in behind. This medium bodied wine is dry with grapefruit tones; viscous in the middle, with feathery tannins and delicate acidity.
This Riesling pairs beautifully with grilled red snapper, curried shrimp, tempura fish, onion tart, pork tenderloin and soft cheeses.
Winemaker recommends to drink between 2025–2035. When older, decanting is highly recommended.
