Q. What is your role as a Savvy Sommelier?
Doug Dolinski: I’m a source of information. A sommelier’s job isn’t to tell people what they like and don’t like. It’s to help them discover those things for themselves. What we do at Savvy Company is create excitement about wine and all the different ways it can be enjoyed. Often, people have such a great time they forget that they’re learning.
Q. Have you had a really memorable wine experience?
DD: I’ve spent my career working as a telecommunications technician so my natural inclination is to want to know how things work. I used to make wine as a hobby—I had a whole set-up in my basement. Through that experience I started to understand some of the science behind wine making. Seeing first-hand how different techniques affect the taste of wine was really fascinating. People are becoming very curious about how different wines are made. I often find myself in conversations with people about how champagnes or rosés come to be and I’m delighted to share my knowledge.
Q. What’s the one piece of advice you like to pass along to people?
DD: There’s a time and place for everything. My preference is usually for stronger, heavier red wines but I can enjoy a glass of almost anything. I’m an avid beer drinker, too. When I finish 18 holes of golf and head into the clubhouse, there’s nothing I enjoy more than a cold beer. But when I sit down to a nice meal, I like to pair it with a glass of wine. The most important thing, I think, is to be open-minded and explore new experiences.
