Featuring Lailey Vineyard

Fruit trees & a few hybrid grapes were once farmed along the Niagara Parkway by husband & wife team William & Nora Lailey. Following in their footsteps as farmers, their son, David (a school teacher) and his wife Donna purchased the family farm & after many conversations around the kitchen table, David & Donna decided to replace the fruit orchards with vitis vinifera grapevines. “The orchard is too much work’, Donna explained to me in an interview.  “And a vineyard is easier?” I did not dare say aloud!

Now as grape farmers, David & Donna spent many years buying, processing & reselling grapes to the neighbouring wineries – many who are now considered the pioneers of the Ontario wine industry.  Transforming the grape growing into a winery – Lailey Vineyard - was sealed with the granting of a winery license, followed by Derek Barnett joining them in 2000 as winemaker.  And with Derek came along his wife Judith as a business partner. Derek’s talents were quickly recognized by the industry with the title of ‘Winemaker of the Year’ at the annual Ontario Wine Awards. This is quite a coup for any winemaker, especially interesting as Derek is a son of a brew master in England!

When you ask David about his wines, he still maintains that, “Our wines express the natural characteristics of the grape varietal and the vineyard they come from.” Over the years. the Lailey estate has grown in size while their wines have grown an outstanding reputation.  With every year that the vineyard matures, the quality of the grapes improves and so does the wine.  You are in for a treat as many of the Lailey vines are close to 30 years old.  The richness & complexity of these wines can be tasted with one sip.  And interesting to compare to last month’s Savvy Selections featured winery – DiProfio Estate – which just opened last summer and their vineyards are less than 10 years old.

The team at Lailey always has something going on at the winery. Their annual Barrel Burning BBQ on July 6th features an afternoon of sausages roasted over “de-commissioned” oak barrels enjoyed with newly released Lailey wines of course!  And for dessert ... Introducing…Lailey Vineyard 

Presented by Sommelier Éva Nagy

 

For over 40 years, David & Donna Lailey have farmed the land, converting the Lailey family fruit farm into a flourishing vineyard & grape growing business. Donna with her ‘roll up her sleeves’ approach to building the business, was a founding member of the Vintners Quality Alliance (VQA) and in 1991 was named the very first “Grape Queen” – a highly sought after annual award designated by the Grape Growers of Ontario for the most impressive & well-maintained vineyard in Niagara – chosen by her peers. The family success lies in the vines telling them what needs to be done to them. With great care, everything is done by hand from grape to glass.

The main man behind the winery - Derek Barnett

Derek (left) began his winemaking career at Southbrook Vineyards originally located north of Toronto.  During visits to Niagara-on-the-Lake, he was attracted to Lailey Vineyard when he saw small parcels of mature vines with potential to be a high quality production facility. Remember 20 years ago, there were not numerous wineries in Niagara as is the case today!  Derek boasts that the success of the winery attributes to the wonderful location of the vineyard & the Lailey family’s commitment to grow only quality fruit. The estate is comprised of seventeen grape varieties and in the winery cellar Derek says he is always experimenting “with two barrels of this & that to keep things fun!”

With 22 years (and counting) in the industry as winemaker, Derek has a deep affinity for the growing Canadian wine industry. He appreciates how wonderful it is having a job you like to do. “Making wine & going out to meet the people who like wine gets me out of bed each morning.”

“The excitement of the growth of the Canadian wine industry generated within by the winemakers is now getting out to the consumers, wine reviewers and even the energy is seen on the retail store shelves”. In the last 10 years, a new generation of wine drinkers has helped proliferate the international message – that Canada makes impressive wines. Coupled with the grass root movement supporting local food & wine, social media is engaging more people to view Ontario & Canada as a wine & culinary destination. The bottom line beams Derek, “We have awesome wine! VQA & the Canadian wine industry is on its way up.” You heard it here first!

A fun bunch – and we’re not talking grapes!

The folks at Lailey are fun & passionate about their winery & wines.  Quick to show you around, anyone jumps in to do a hands-on tour led – including Derek or the resident sommelier.  In the tasting room, it is all about the wine; no trinkets nor t-shirts nor glassware for sale, as they do not want the Lailey team or the visitors to lose focus on the wine.

Considered “old school”, they do not interfere in their winemaking approach. Derek is hands-off, listening to what the wine wants to do. Romantic as it may sound, Derek maintains a hands-off approach, “I bottle wines when they are ready to be bottled”.

Favorites – vintages, wines & harvest

Which wines does Derek enjoy making?  Well that changes every year. Currently, he has a passion for barrel-fermented Chardonnay, “Niagara’s white wine grape” as he calls it. Other varietals that intrigue & inspire him are German Riesling with its bright aromatics, Northern Rhone style Syrah & Ontario varietals too.

Favorite times of year? Derek has 2 favorite periods during the grape-growing season: The green tinge of spring signifies another year of winemaking. Harvest provides the next bottle of wine that he is going to produce. If he has to choose his favorite time of the year, “Harvest!”, he exclaims.

Winemaking for 13 years at Lailey has led to many awards.  Derek is proud of the “stunning” 2007 Syrah and 2002 limited edition Chardonnay: “It was hard to top”.  2012 is a well-balanced vintage, comparing closely to 2002, one of his favourite vintages for good growing.

Derek mentions that there is no one particular ‘proudest moment’ –there are too many! Chardonnay excites him, as he describes it as “stunning”. Syrah, Cabernet Franc & Pinot Noir are great personal challenges too.

A Curious Mind

All of these proud moments led to the creation of Curious Mind label: one-offs available only to loyal Lailey customers. Derek explains that these wines are his ‘toy box’ – he experiments using the any of 17 grape varieties and 9 different barrel brands to play & create very interesting curiosities. Sauvignon Blanc VQA 2012 $20.00

terestingly the history of Sauvignon Blanc is rooted in the ‘Old World” wine region of Bordeaux, France.  Today though, it is planted around the world – New World & Old World, resulting in crisp, dry & refreshing white wine. Commonly referred to as ‘Sauv Blanc’, is the main component of the famous French dessert wines of Sauternes & Barsac. Have you had these wines?

Savvy Sommelier Tasting Notes: Zippy aromas & flavours of citrus (think lime & white grapefruit), floral, distinct minerality with a zingy tart gooseberry taste that when Eva had a sip, she immediately mentions ‘Oh my, this reminds me of mother-in-law’s gooseberry pie’.

Reminiscent of a New World style Sauvignon Blanc without being over-the-top. Mint makes an appearance on the palate resulting in a fresh & cleansing long finish. Delicious!

Suggested Food Pairing: A classic pairing is with goat’s cheese/chêvre, asparagus & sushi.  Give the Spanakopita recipe a try on the following pages.

Canadian Oak Chardonnay VQA 2011 $25.00

The vineyards feature some of the oldest plantings of Chardonnay in Ontario.

We are excited to include this wine as it has been a long favorite of Debbie’s to showcase at Savvy Events since the ‘what if’ story of making barrels with Canadian Oak has resulted in incredible wine.  It is truly a Canadiana story…move over maple syrup!

The story goes... about 5 years ago, a handful of winemakers were ‘talking shop’ at a backyard BBQ.  Conversation lead to wondering what a barrel made with native Canadian oak would do to their wines. After a lot of research, they found a cooper (barrel maker) in California who would make these one-of-a-kind barrels. Next step was to find native oak trees – luckily found in Brantford, Ontario. The wood staves were cut and shipped in hockey bags (brand new ones of course!).  Their “what if moment” & hard work paid off when several Canadian Oak barrels arrived at the wineries. Today, there are fewer than 10 winemakers across Canada who barrel age some of their wines in this special oak…and now there is a cooper in Canada making the barrels.  Derek is a big enthusiast with his Chardonnay, Pinot Noir and Meritage (an optional wine we offered) wines aged in Canadian oak and constantly receiving rave reviews.

Savvy Sommelier Tasting Notes: “This wine makes me think of buttered popcorn” suggested Eva.  Golden straw colour with aromas of wildflower honey, tropical fruit (think coconut & sweet citrus) with some nuttiness – walnut perhaps?.  Rich & round mouthfeel with flavours of lime, stone fruit & baking spice with minerality & a lengthy warm finish.

Suggested Food Pairing:  Given the rich aromas & flavours of this Chardonnay try the Chicken & Farfalle with Creamy Walnut Sauce recipe that follows.


Cabernet Sauvignon VQA 2010 $30.00

Expect loads of ripe fruit from this award-winning Cabernet Sauvignon.  (Bronze Medal at Canadian Wine Awards 2012 & Bronze Medal at the Intervin International Wine Awards 2012).  This wine is unfiltered meaning that small particles may be found in the bottle, leaving the wine’s aromas & flavours intact. No need to be alarmed if you notice this when you serve the wine.  It is completely natural

Savvy Sommelier Tasting Notes: Verging on opaque in colour, this Cabernet Sauvignon has amazing aromas of ripe fruit  - plum, figs, dates, dark berries – along with red roses, cranberry, rhubarb & vanilla. Flavours of tart red cherry, berry & cassis layered with smoke, earth & tobacco. The balancing acidity keeps the tannins in check in this beautifully structured full-bodied red wine. The long finish begs for another sip. Don’t you agree?

Suggested Food Pairing: Fire up the BBQ! Enjoy with a big steak or, for a change, grilled Portobello Mushrooms.

Cellaring: Ready to drink now or cellar for 5-7 years.

For all of you big red wine lovers – we did not want you to miss this special treat!

Meritage is the wine name that winemakers outside of France use to call their wines made in the French Bordeaux style.  This is a blend of the best from the highly acclaimed 2010 vintage. It’s a big juicy red wine made with 45% Merlot, 33% Cabernet Franc, 22% Cabernet Sauvignon – all from the Lailey estate.

Savvy Sommelier Tasting Notes: This is a big, bold, almost black coloured wine has aromas of molasses, tar, tobacco, smoke & blueberry with something that smells like “Chinese Five Spice mix”, says Debbie. Beefy with big tannins that will continue to mellow, the flavours of coffee, cocoa & black pepper with an incredible long finish.

Cellaring: Enjoy now or put away in your cellar to mellow for a few more years (5 to 7 years max).

 

~ RECIPES TO ENJOY WITH YOUR SAVVY SELECTIONS ~

 

With Lailey Sauvignon Blanc VQA 2012 …

Spanakopita

From Chef in You
Serves 4

Ingredients

3 bunches of fresh spinach (about 2 lbs)
1 onion, chopped finely
6-8 spring onions (scallions), chopped
5 oz feta cheese, crumbled
3 oz ricotta cheese
1/3 cup freshly grated vegetarian parmesan
1 Tbsp fresh dill, chopped
1 generous pinch of nutmeg
1/2 cup fresh parsley, chopped (cilantro works well too)
12 sheets of phyllo pastry, thawed
3-4 Tbsp of unsalted butter, melted + some olive oil (or more if required)

 

Method

  1.  Trim the stems of spinach & clean them well in cold water. Filling the kitchen sink with lots of water and then submerging & rinsing the spinach works well in cleaning out the mud and debris. Drain. Roughly chop & place in a steamer.  Steam for 5-8 minutes or until the leaves are wilted. Drain. Squeeze out the excess water from the spinach. This step is extremely important to avoid a soggy filling. Set aside.
  2. Take a skillet and heat 1 tsp of olive oil & sauté the onion until tender. Add the spring onions & cook for another 2-3 minutes. Remove from heat & add the spinach, herbs, cheeses & nutmeg. Season with salt & pepper (if required). You can taste it to see if it does not have enough salt from the feta cheese.
  3. Preheat the Oven to 350°F (180°C). Place the 3 sheets of phyllo at a time (keeping others covered to avoid drying out). Mix the butter & 2 tbsp olive oil in a small bowl. Brush each sheet with butter mixture & lay on top of another. Cut into equal thirds lengthwise.
  4. Spoon a little filling on an angle at the end of the each strip. You don't want to be overzealous here with the portion since it will slip out later. Fold the pastry over to enclose the filling to form a triangle. Now take it upwards to form another triangle.
  5. Repeat this process until you reach the end. You will have a small strip at the end which you can grease with little butter mixture & stick to the pastry. Brush the top lightly with butter mixture.
  6. Grease two baking sheets. Bake the triangles for 20-25 minutes or until the pastry is golden brown.

 

With Lailey Canadian Oak Chardonnay VQA 2011 …

Chicken & Farfalle with Creamy Walnut Sauce

From Eating Well
Serves 2

Ingredients

1/3 cup walnuts
1 small clove garlic, peeled
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Pinch of cayenne pepper
1/4 cup reduced-sodiumchicken broth
2 tablespoons finely chopped fresh parsley
1/2 teaspoon lemon juice
1 teaspoon walnut oil, or extra-virgin olive oil
8 ounces boneless, skinless chicken breast, trimmed of fat, cut into 1/2-inch pieces
4 ounces whole-wheat farfalle pasta
1 cup small broccoli florets
1/2 red bell pepper, seeded and cut into thin strips

 Method

  1. Put a large saucepan of water on to boil. Combine walnuts, garlic, salt, pepper & cayenne in a blender; pulse until finely chopped. Blend in broth, parsley & lemon juice until smooth & creamy.
  2. Heat oil in a medium nonstick skillet over medium-high heat. Add chicken & cook, stirring often, until it is no longer pink in the middle, 3 to 5 minutes.
  3. Cook pasta for 5 minutes. Add broccoli & bell pepper, cook, stirring occasionally, until the pasta & vegetables are just tender, about 4 minutes more. Drain, return to the pot.
  4. Add the walnut sauce & chicken, then toss to coat.

 

With Lailey Cabernet Sauvignon VQA 2010…

Grilled Portobello Mushrooms

From allrecipes.com
Serves 4 to 6 – depending on the size of meat

Ingredients

3 portobello mushrooms
1/4 cup canola oil
3 tablespoons chopped onion
4 cloves garlic, minced
4 tablespoons balsamic vinegar

 Method

  1. Clean mushrooms and remove stems, reserve for other use. Place caps on a plate with the gills up.
  2. In a small bowl, combine the oil, onion, garlic and vinegar. Pour mixture evenly over the mushroom caps and let stand for 1 hour.
  3. Grill over hot grill for 10 minutes. Serve immediately.

We are at it again!  The Savvy Team is excited to announce...

Winemakers and winery owners from Niagara ‘s Twenty Valley wine region - located between the Niagara Escarpment and Lake Ontario – are coming to Ottawa to raise a glass to this year’s outstanding harvest and to pour their wines at their  first ever Taste & Buy event.

People are talking…about Ontario Wines

It is no wonder that the world has started to notice Ontario wines. As seen in this week’s release at LCBO Vintages (September 15), we have much to be proud of. The recent count at the end of 2011, there were just over 130 wineries in Ontario.  And I noticed many new wineries in my recent trips to Niagara and Prince Edward County this summer.

And there is a great buzz amongst wine lovers across the province who are being constantly amazed with the wine made in their own backyard.  Read some of these discoveries on www.lcbogolocal.com or on follow the tweets on #LCBOgoLocal

Most winemakers agree that great wine starts in the vineyard and it’s the soil content that places Ontario wines on the international map. We often see tasting notes on Riesling that mention the zippy minerality in the wine. This is largely due to the soil. Last fall, I spoke at a seminar at the “Taste” festival in Picton and I learned there were over 10 different soil types in Prince Edward County alone. Talk about a challenge for the winemaker.

Ontario wineries produce largely wines made from the Riesling, Chardonnay and Pinot Noir grapes. With these varietals, sometimes blended with other less known ones,  come some great sparkling wines. The Peller Estate Ice Cuvee Sparkling Rosé, (featured this month at Vintages $35.95) was a winner of a gold Medal at Wine Access 2011 Canadian Wine Awards. Hinterland Winery in Prince Edward County specializes in sparkling wines and most wineries feature a sparkling wine. I recently tasted the Fielding Estates and13th Street "sparklers" which I can only describe as “seriously yummy”.

Niagara’s Stratus Vineyards is the world’s first winery to be given the coveted LEED (Leadership in Energy and Environmental Design) green certification. Southbrook Winery’s  “Framboise” can be found at the prestigous Harrods in London, England. Her Majesty Queen Elizabeth requested 6 bottles of icewine during her Jubilee Visit to Canada in 2002 from Canada’s Icewine Specialists at the Royal DeMaria Winery in Beamsville.  Ontario produces 75 % of all Canada’s ice wine which can be risky business since production requires the availability of a large enough work force to pick a whole crop within a few hours, often on a moment’s notice.

Niagara’s Sunnybrook Farm Estate Winery is Canada’s first fruit winery specializing in wines made from 100% Niagara Peninsula grown tree fruit and berries. We even have a winery that, thanks to its location on Pelee Island, offers a Bird Observatory and another winery that offers tastings in an old caboose, not to mention the one in a converted convent. Many Ontario wineries also have taste-rooms in original homestead barns some of which are architecturally signficant dating back to 1815.

Every year, the serendipity excitment of finding new wine takes me on the Ontario journey. We need not look further than our own backyard. The following wines illustrate that Ontario has it all. I hope you agree.

Cave Spring Estate Bottled Vineyard Chardonnay Musqué VQA 2009

VQA Beamsville Bench,Niagara Peninsula

This clean refreshing beauty just glistens in the glass. The Chardonnay Musqué is a clone of the Chardonnay grape which means a completely different taste from the latter. While it has aromas of white blossoms, the grapes were vinified in stainless steel that give the wine some grapefruit and green apple flavours. It is slightly off dry, smooth and supple all the way through to the minerally finish. It has solid medium body that could carry you from the appertif to desert, not to mention a thirst quenching sipper on its own.

 

2027 Falls Vineyard Riesling 2011

VQA Vinemount Ridge, Niagara Peninsula
$18.95 (Vintages #294041) 11% alcohol

 

Pale in colour and almost watery in appearance, my first introduction to Falls Vineyard is a delicious one. I adore a light coloured wine. The Riesling is slightly herbaceous, lots of wet stone flavours that are typical in a Niagara Riesling with that pinch of lemon lime citrus that take your taste buds on a salivating roller coaster. It is light bodied, a lovely end of summer drink to enjoy with a field tomato salad, some coarse salt and a French stick. Get those taste buds moving !

 

 

 Lailey Vineyard Chardonnay 2010

VQA Niagara Peninsula
$19.95 (Vintages #193482) 13.5% alcohol

Winemaker Derek Barnett has created an elegant labour of love with this Chard. Think of ripe but crisp yellow apples, a pinch of lemon, a tad buttery but fresh, medium bodied with a slightly caramel finish.  Perfect for some baked or grilled tilapia and asparagus and a little soft artisan cheese to finish. It is a beautifully balanced wine, a good price point for this quality and I would be proud to serve this Chardonnay to anyone. A great all season Chardonnay.

Featherstone Cabernet Franc 2010

VQA Niagara Peninsula
$16.95 (Vintages #64618) 13% alcohol

 

Nothing like a bright ruby red wine that shows off aromas of sweet and sour cherries. Only 694 cases produced so do grab one while its on the shelf. It is slightly vegetal, red berry flavours, with a hint of green pepper and tobacco with grippy tannins (this is a good thing).  A fabulous bbq wine to have with meaty burgers or kebobs.

 

Henry of Pelham 2010 Reserve Baco Noir

VQA Ontario
$24.95 (Vintages #461699) 13.5% alcohol

I remember having a prof in Sommelier school that said Baco Noir was only good for making jelly. I wish I could find him now to prove him wrong. The wine is dark and inky with aromas of raspberries, cherries and wood smoke.  Slightly vegetal with ripe chewy tannins that lend interest to the wine and give it a  long lingering finish. Would be fabulous with some sausages or pasta to soak up the bone dry tannins.

The Ontario wines from this release were a really hard pick. I could have listed all Chardonnay’s but knew that would be uninteresting for you as the shopper. Who besides me would like a basket of Chardonnay wine?  I also like to showcase as many Ontario wineries as possible and plan to do so again next month. Some may also be from this release to help talk “turkey”.

If you do however happen to win the lottery, I tried an Inniskillin Riesling Icewine ($69.95) that won the 2012 Lieutenant Governor’s Award for Excellence in Ontario Wines and a Gold Medal for Best Vinifera Icewine at the The Lieutenant Governor General's Award for Excellence in Ontario Wines. The honeyed pear and baked apple flavours with just the perfect balance of acidity was really over the top. I’m trying to think of a special occasion that could warrant such a splurge but there are so many Ontario wines that I want to put in my basket, that one will have to wait.

My heart beats a bit faster when I saw that the LCBO Vintages will have a few more wines British Columbia on their shelves this weekend.  It is a rare occurrence & my tip to you is that they will quickly sell out!  While we patiently await the Senate to put their seal of approval on the new Bill C-311 (to remove inter provincial trade barriers for wine making it easier for Canadians to buy & transport Canadian wines throughout Canada), here’s my wine shopping list of must buy wines this weekend.

Mt Boucherie Estate Collection Semillion VQA 2008, British Columbia

Brothers Kal and Nirmal Gidda opened Mt. Boucherie Family Estate Winery & recently celebrated their tenth anniversary. They are a true family business success story!  Located in West Kelowna's Lakeview Heights area, this winery is only a five minute drive from downtown Kelowna across the scenic Okanagan Lake floating bridge. Winemaker Jim Faulkner and his team, have grown Mt. Boucherie over the years to produce a total of 21 reds, whites and Icewines amounting to 25,000 cases!

Semillion is a rare grape variety in British Columbia vineyards, yet Jim has created a stunning wine.  A Full bodied white wine with smooth texture & aromas of fresh apple tart with a shortbread crust, beeswax with some refreshing acidity. Smooth texture in the mouth with a full bodied nutmeg & white pepper finish that goes on forever. Serve with paella, blackened catfish, pan fried scallops or smoke salmon.

 

Blue Mountain Chardonnay VQA 2010, British Columbia

Using only grapes grown on their property, the Mavety family has been growing grapes in the Okanagan for over 40 years – true pioneers! For the first 21 years, they supplied premium grapes to commercial wineries when finally the allure of producing quality wines inspired them to craft their own label in 1991. The family has not looked back since!

Today, on their 31-hectare estate, they make limited quantities of complex wines from noble varietals including Pinot Noir, Gamay Noir, Pinot Gris, Pinot Blanc and Chardonnay -- the same varietals found in the Champagne, Burgundy and Alsace regions of France.

This is a beautifully crafted wine made with Chardonnay grapes that half have been aged in oak while the other half was aged in stainless steel tanks. The result is a medium bodied white wine with a combo of buttered popcorn, warm spices & a zippy long finish. Reminds me of a dense pound cake or a flaky croissant.  Easy drinking & round in the mouth. Each sips begs you to come back for more.  This wine will go down too easily, so get two bottles & save yourself the disappointment when you reach the bottom of the bottle.

A great match for BBQed pork tenderloin or a heavy fish - tuna or swordfish steaks.

Savvy Sommelier & founder, Debbie Trenholm’s interest in Malivoire began in 2001 while she was enrolled in the Queen’s University Executive MBA Program.  Using this as an entrée to become involved in the wine industry, Malivoire was her first business consulting ‘gig’. This experience gave her an insight to Malivoire’s unique gravity pull winemaking technique (Malivoire was the first Niagara winery with this technique that has now been adopted by others), their dedication to organic grape growing and winemaking practices, as well as the fascinating people who make the impressive wines.

Over the years, Malivoire has been involved in several facets of The Savvy Grapes and Savvy Company.  They were the featured winery in one of our first winemaker’s dinners, were one of the first to be showcased in the Savvy Selections and we continue to showcase their wines in our various events.  And Debbie helped hand during their icewine harvest!

I recently met the winemaker at Emiliana and they have a wonderful story about the winery.  All of the workers and their families live on the estate.  Founded on being totally organic and nurturing a community, everyone takes care of the property, vineyard and the operations.  They even have a bee colony that young & old is involved in caring for. Be on the look out for other organic & biodynamic wines in Vintages.  And if you travel to Chile go & visit!

This BIG red wine is loaded with black fruit (think blackberries, figs & plums), vanilla & fresh ground black pepper. It’s begging for a steak or better yet fall of the bone ribs. At this price, there is no reason why not to buy a case!

Very VERY deep purple in colour & as smooth as velvet. This red wine is concentrated with tastes figs, cassis, black olives, tar & tobacco aromas. With one sip you can melt with the rich tastes of dark chocolate, black fruit & medium firm tannins. Where’s my steak mate?

Ridge Road Estate Winery occupies a coveted position atop the north-eastern edge of the Niagara Escarpment, a designated UNESCO World Biosphere Reserve.  Owners Jayne and Sean Douglas along with their four children, recognize the great value of this ecosystem and are committed to carrying on the family tradition of stewardship of the land, while offering unique small-lot hand-crafted wines.

Once you leave the QEW near Stoney Creek, the road to the winery winds up the Escarpment along switchbacks and through lush vegetation. The winery tasting room sits like an invitation in an attractive rural setting, the pond is loud with croaking frogs while offers water for the visiting deer. And the property is on a major raptor migration route, so you can expect to see birders sitting on the patio, glass of wine in hand, binoculars nearby focused on the raptors in the fruit trees. In fact, Jayne explained that her four children had the opportunity to watch peregrine chicks hatch last spring.

The creation of this winery is a story of the agricultural evolution of the region, of the unique environment in which the property is situated and of the life-long dream of this couple. The farm, comprising 60 acres, has been in Jayne’s family since 1875. In fact, E.D Smith was the original mortgage holder on the property and great-great-grandfather sold his fruit to this iconic Canadian food company.

While on a trip to France 25 years ago, Jayne and Sean caught the wine bug! With fulltime careers in Burlington, they dreamed of purchasing the family property, still a working fruit farm, and transforming part of it into a vineyard and winery. Their idea came into fruition with the purchase of the family property 16 years ago. Eager to get to work, Sean enrolled in winemaking and viticulture courses, while gradually building the structure which today is the winery tasting bar and barrel cellar. They developed their expertise in the 12-acre vineyard, selling their grapes to local winemaking hobbyists and Sean practiced as an amateur winemaker. After careful deliberation, they opened the winery in September 2009 and in 2010, they took the plunge to become full-time winery proprietors.

Our Savvy Sommelier Susan, found a meeting with Jayne and Sean is like a visit with friends or relatives that you don’t see very often. You can pick up the threads of the relationship in no time! After discovering Ridge Road shortly after they opened, we were eager to introduce them to our Savvy Selections subscribers. Ridge Road Estate Winery

Presented by Sommelier Susan Desjardins

Jayne remembers the joy of her childhood visits to ‘the farm’. “My Gramma Verna Stuart owned the farm where we would have large family gatherings and pot luck picnics there on weekends. My brother, cousins and I would run wild through the 60 acre fields & orchards, chasing and trying to ride the poor cows! We would hike in the forested area along the Niagara Escarpment – it was a fabulous weekend getaway for us ‘city kids’. Today, my own 4 children enjoy the same open spaces, hikes and adventures discovering wildlife like bull frogs and salamanders, snakes, deer, raptors, lynx, coyotes—even a generation later, it’s still a great weekend getaway for city kids!”

The property offers a unique growing environment, with lake breezes flowing up and over the escarpment and clay loam soils. The ubiquitous Escarpment limestone offers a mineral component to the wines. Sean explains, ‘Although on average the temperature is 1°C cooler up here in the winter, it’s often warmer in the summer. The site benefits from consistent breezes that quickly dry the grapes after a rain, and that tend to push the late spring frosts up over the escarpment—fortunately, wind machines are redundant for us!”

The focus is on quality at Ridge Road, with hand harvesting and sorting in the production of their small-batch wines. Sean is the winemaker, with over 20 years’ experience both as an enthusiastic amateur winemaker and in his current role at the winery. Fifteen years of amateur winemaking, as well as valuable product knowledge gained through supplying grapes to other wineries and amateur winemakers, gave the couple the confidence to ‘go pro’ and create their first commercial vintage in 2007.

Jayne remembers, “Sean believes that the grape should shine through. Based on the climatic conditions of the vintage, yeasts are chosen to accentuate what the grape is projecting. Minimal fining and movement is practiced so as not to bruise the wines. And we’ve moved toward the Stelvin closure (winespeak: screwcap) to preserve the freshness of the wine and avoid microbial infection.”

After getting some initial advice on appropriate varietals, Sean and Jayne planted Chardonnay, Riesling and Cabernet Franc, along with Vidal and Baco Noir grape varietis. They’ve been experimenting with other varietals too, and recently added Pinot Noir, Syrah and Gamay Noir to their vineyard. In addition to these varietals, their property is the one of only three trial sites in Ontario for Traminette – a hybrid varietal created at the University of Indiana in 1965 by crossing Gewürztraminer with the little known varietal called Joannes Seyve. The cross was sent to Cornell for development and has produced a wine grape well adapted to a cool climate region like Niagara, displaying cold hardiness, good productivity and resistance to fungal diseases. When combined with Geisenheim and Vidal grapes in Ridge Road’s ‘Vineridge Blend’, it results in a zesty, fresh white wine with high-toned aromatics of floral, citrus and tropical notes, along with a mineral quality and a silky texture.

Sean and Jayne have purposely retained a large portion of the home farm as a fruit orchard and natural habitat for the varied local flora, birds and as Jane says…‘critters’. Working with the local conservation authority, they are planning to establish a walking trail through part of the property to a nearby waterfall. If you are a bird lover, Ridge Road invites you to their Raptor Festival, and spare binoculars are always available for the uninitiated wine-tasting birdwatcher!

Even with their short time in business, the quality of Ridge Road’s wines has been recognized with two gold medals for their 2009 Riesling and Vidal at the 2010 All Canadian Wine Championships. Jayne feels their approach accounts for this: “Our focus is to make hand-crafted wines that showcase our terroir. We create two blends each year— Call Me a Cab and Intersection White - and adjust our single varietal portfolio annually in response to the vintage. We’ve also found that our property produces very crisp, fruity sparkling wines, ideal for causal occasions. We plan to expand that part of our portfolio in the future.”

We are fortunate to feature Ridge Road early in the summer, as their wines are usually sold out by early fall. They are expanding to 4500 cases over the next two years, with a long-term plan to cap production at 10,000 cases. “We really believe that for us, that’s the maximum volume that will allow us to continue to put the care and effort we feel is required into each wine.”

~ Savvy Sommelier Tasting Notes ~

Ridge Road Pinot Gris 2011 VQA, $16.95

The first Pinot Gris produced at Ridge Road, this is a unique wine. The grapes were divided into two lots, the first given extended maceration to create a pinkish hue and then fermented in stainless. The second batch was whole cluster pressed, the fermented in new French oak, then blended with the first to create this mouth-filling wine.

Savvy Sommelier Tasting Notes: Finely crafted and well balanced, this Pinot Gris offers great weight. texture and length. Honeyed fruit aromas dominate with pear, nectarine and crunchy Gala apple. Palate pleasing and silky, lively citrusy acidity balances the honeyed orchard fruit, while a nutty note persists on the long tangy finish.

Suggested Food Pairing: Enjoy this wine with a grilled chicken Caesar salad, or with shellfish. The recipe for Spaghetti with Shrimp is on the following pages for you to try your hand at with this wine.

Ridge Road Pinot Noir 2009 VQA, $19.95

2009 was a cool wet vintage, but produced attractive Pinot Noir like this one. The grapes were sourced from older vines from a neighboring vineyard as well as from Ridge Road’s first growth vines. Older French oak barrels were used to showcase the bright tangy fruit.

Savvy Sommelier Tasting Notes: There’s interesting complexity in the aromas—red cherry, hints of smoke and cedar, and a whiff of vanilla and tomato leaf. Dry, mid weight, the wine has a tangy texture, red fruit garnished with spice, notes of roasted red pepper and a lengthy peppery finish.

Suggested Food Pairing:  Grilled salmon, chicken alfredo, or warm Brie with red pepper jelly are ideal matches. Susan shares her recipe for Pork Chops to serve with this wine.

Cellaring: Enjoy the wine now or Sean remarks that it could be cellared for 3-5 years

 

Ridge Road Merlot 2010 VQA $18.95 

This Merlot was bottled as a varietal wine due to unique representation it offers of the vintage, the vineyards and Sean’s winemaking style. The wine is a blend of six specially selected barrels, predominantly new and older French oak, with one American oak barrel ‘making the cut’.

Savvy Sommelier Tasting Notes:  From a great vintage, this Merlot displays aromas and flavours of black berry and plum, chocolate coated cherries as well as dried cherries with an underlying mineral note. Dry, mid weight, the subtle structure, round tannins and clean texture frame layered fruit flavours, recurring chocolate notes and sweet spice that lingers on the finish.

Suggested Food Pairing: Serve this wine with pork with a burgundy sauce or grilled veal chops.

Cellaring: Drinking well now, this wine will cellar 3-5 years.

With Ridge Road Pinot Gris …
Spaghetti with Shrimp

The Eating Well Cookbook
Serves 4

Ingredients
1 Tbsp olive oil
5 garlic cloves, minced (or to taste)
1 tsp tomato paste
1 ¼ C dry white wine
2-3 tsp grated lemon zest
1 ½ lb medium-sized shrimp, peeled & deveined
¼ C minced fresh parsley
Salt & pepper to taste
1 lb spaghetti
1/3 C fresh bread crumbs, toasted
Fresh grated parmigiano (optional)

Method

  1. In a large deep saucepan, heat oil over low heat. Add garlic & tomato paste and sauté for 2-3 minutes, or until the garlic begins to stick to the bottom of the pan. Add wine and lemon zest. Increase heat to medium & simmer, uncovered, for 5 minutes or until garlic has softened. Add shrimp & cook for about 3 minutes longer, of just until shrimp are pink. Add parsley & season with salt & pepper.
  2. Meanwhile, cook spaghetti in a large pot of boiling, salted water until it is tender but still firm. Drain the spaghetti in a colander & transfer to a large, warm shallow serving bowl. Toss with shrimp sauce.
  3. Taste & adjust seasonings. Sprinkle with toasted bread crumbs (and parmigiano cheese) and serve immediately.

Pork Chops with Fresh Tomato, Onion & Feta

Serves 4

Ingredients
1 large onion, halved & thinly sliced
2 Tbsp extra virgin olive oil, divided
4 pork loin chops, 1” thick
salt & pepper to taste
sliced garlic cloves
½ pint red grape tomatoes, halved
½ pint yellow grapes tomatoes, halved
2 cloves garlic, diced
1 Tbsp dried basil
2 ½ tsp balsamic vinegar
2 oz. crumbled feta, or to taste

Method

  1. Heat 1 Tbsp oil in skillet over medium heat. Stir in the onion & cook until golden brown. Set aside.
  2. Add ½ Tbsp oil to skillet & heat. Season pork chops by rubbing garlic clove over, then sprinkling with salt & pepper. Cook to desired doneness. Set aside, keeping warm.
  3. Heat remaining oil in skillet. Return onions to skillet, stir in tomatoes, garlic and basil. Cook, stirring for 3-4 minutes, until tomatoes are tender. Mix in balsamic vinegar & season with salt & pepper.
  4. Top chops with the onion & tomato mixture & sprinkle with feta. Enjoy!

 

With Ridge Road Merlot…

‘Merloted’ Grilled Beef

Serves 4

Ingredients
4 filets of beef
½ C Merlot
1 Tbsp Worcestershire Sauce
4 cloves garlic (or to taste), minced
1 Tbsp brown sugar
1 tsp fresh-cracked pepper

Method

  1. Stir together Merlot, Worcestershire sauce, garlic, brown sugar and pepper.
  2. Add beef fillets and marinate at least 10 minutes and up to 2 hours.  
  3. Place marinated meat on hot grill and cook to desired doneness. Serve with grilled veggies and rice.

Option: You can create extra marinade, bring it to a boil in a small saucepan, reducing by 1/3, then pour over the fillets.

Eating outdoors is one of the best ways to enjoy summer.  Why dine inside when we do that all winter long?

I strongly believe that a good meal deserves to be served with good wine. To make sure that I have wine on hand this summer, I took a daytrip to Prince Edward County – a three hour drive from Ottawa or Toronto – to buy wines at the wineries located off-the-beaten-track as well as stock piled favorites I discovered at a wine tasting that Savvy Company hosted showcasing wines from Niagara-on-the-Lake.  In both cases, wines were purchased directly from the winemaker as the wines at the LCBO has a modest selection of all of the wines that are crafted at the wineries throughout Ontario.  For a greater selection, contact the wineries directly or contact me & I’ll arrange for these wines to be sent to your home, office or even cottage!

Sparkling wine

Prince Edward County pick: Lighthall Vineyard Progression Sparkling Vidal VQA 2011 $20 – refreshing lemon/lime/grapefruit combo of tastes with fine bubbles

Niagara-on-the-Lake pick:  Konzelmann Sparkling Rosé $16 – looks like a sunset in the glass.  Dry, refreshing – great to sip on before dinner or to unwind with after a meal

White Wines

Prince Edward County pick: Exultet Estates Cru X White Light VQA 2011 $22.95 – The County’s newest winery making impressive wines – including this blend.

Niagara-on-the-Lake pick:  Lailey Vineyard Unoaked Chardonnay VQA 2001 $15 – a crowd pleasing dry white wine that is perfect to sip on while the BBQ warms up.

Prince Edward County pick: Karlo Estates Frontenac Gris Rosé VQA 2011 $18 – reminds me of watermelon – its colour, aromas & tastes!

Wines to discover at Terroir Wine Festival in The County

To prepare you for wine discoveries at next weekend's Terroir Wine Celebration, our Sommeliers share with you tasting notes of more Prince Edward County wines.  Whether you enjoy white wine, red wine or are in the mood for a glass of Rose or sparkling wine, these wines will WOW you!

 

Huff Estates Vidalessco Sparkling VQA 2011

There is no better way to begin a dinner party (or any meal for that matter!) than with the pop of a cork of a bottle of bubbly!  This unique wine is made with Vidal grapes.  Vidal is often left on the vines to make icewine, yet at Huff Estates winemaker, Frederic Picard (originally from Burgundy France), decided to do something completely different – create a crisp & refreshing sparkling wine fashioned after the Italian Prosecco.

Savvy Sommelier Tasting Notes: Dry with fine mousse (winespeak: bubbles) elegant aromas & tastes of citrus (can you find mandarin or lime?) & toasted almond.

Suggested Food Pairings: For fun, serve sparkling wine with salty potato chips (the saltier the better!). The salt reacts with the bubbles & makes an even more lively sensation in your mouth – like fireworks!

 

The Grange’s Trumpour’s Mill Chardonnay VQA 2007

A visit to The Grange of Prince Edward County Winery is not only an opportunity to taste the wines, explore the vineyards and marvel at the historic restored buildings on site; a visit provides a Canadian history lesson too.

This month, we feature The Grange in our Savvy Selections wine of the month club.  This Chardonnay impressed our Savvy Sommeliers.  Chardonnay was among the first varietals planted on the Granger estate. A grape which lends itself to a range of styles, this exemplar is unoaked and displays the texture and complexity of extended lees contact.

Savvy Sommelier Tasting Notes: Offering tantalizing aromas of jasmine, honeyed stone fruit, pear and mango, this is a balanced creamy yet dry wine, weighty with flavourful fruit and kissed with a touch of toasted nuts. It finishes slightly warm and gently spiced.

Suggested Food Pairing: Enjoy this wine with pasta in a cream-based sauce, with crab cakes or lobster, or with savoury roast chicken.

Cellaring:  Delightful now or over the next couple of years!

 

Karlo Estates Frontenac Gris Rose VQA 2011

Karlo Estates is a must visit as one of ‘The County’s’ wineries - housed in a heritage Loyalist barn. Owner & winemaker Richard Karlo has developed his career from being a wine judge to an amateur winemaker, then consulting winemaker & now winery owner. 

Savvy Sommelier Tasting Notes:  Last year’s Rose from Karlo was full of rhubarb & citrus aromas & tastes.  This vintage boasts watermelon, tangerine & ruby red grapefruit.  Crisp & refreshing, this medium bodied Rose feels delicious in your mouth & tastes wonderful too!

Suggested Food Pairings: This is a perfect wine to unwind with at the cottage, pack with a picnic or on enjoy while you soak up the sunshine in the backyard.  Serve on its own or with spicy food.

 

Rosehall Run Cabernet Franc Cold Creek VQA 2008

Cabernet Franc is often used in red wine blends, yet in Ontario, this grape grows so well that winemakers keep it aside to craft outstanding Cabernet Franc wines.  Rosehall Run Vineyards owner & winemaker Dan Sullivan found a parcel of land in The County – complete with a creek running through it - with outstanding Cabernet Franc grapes. 

Savvy Sommelier Tasting Notes: Bright garnet red colour in the glass, bursting with aromas of ripe red berries, raspberry that packs an impressive punch of dark chocolate.   On the palate it is dry, medium bodied with soft tannins reminders of sour cherry & cassis.

Suggested Food Pairings: The lingering finish makes this wine a perfect match for both light & heavy dishes from BBQ sausages, lamb chops, roast duck & even grilled salmon. Debbie loves this wine with a chunk of dark chocolate! 

Stanners Vineyard Cabernet Franc PEC VQA 2010

Stanners Vineyard is one of the newest wineries to open in The County is run by the Stanner family & everyone in the family is involved!  Located near the town of Hillier (about 20 mins away from Picton), they are surrounded by other neighbouring wineries.  The Stanners made 2 Cabernet Franc wines – one all County while the other is a blend of Niagara & County.  This one was the favorite at the recent County in the City wine tasting event in Ottawa.  It was fun to try the 2 wines side by side - and this you can definitely do when you visit Terroir Wine Festival! 

Savvy Sommelier Tasting Notes: Plum in colour, there are delicious aromas of blackberry, raspberry & plums too that fill the glass then continue into the taste.  It is dry & well balanced wine with a medium long finish.  A very impressive wine.  Well done!

 Suggested Food Pairings: An easy drinking red wine that would be good with grilled burgers, lasagna or even BBQed steak.  Stock up for the summer!

Start with a sparkling...

Lighthall Progression Sparkling VQA 2011

Lighthall is a boutique winery in ‘The County’ focusing on growing Chardonnay & Pinot Noir grapes on their estate to make outstanding wines. Just bottled in time for County Terroir celebration, this sparkling wine is made using Vidal grapes – often saved for dessert wines.  This bubbly is far from being sweet!

Savvy Sommelier Tasting Notes:  Hand-crafted using the Charmat Method of sparkling winemaking, this bubbly is has refreshing acidity with aromas of citrus, pear & crunchy apple to create the lively, refreshing finish.

Suggested food pairings: Served well chilled, this wine is lovely on its own, with oysters, or paired with light appetizers.

 

A taste of white wines awaiting to be discovered...

Huff Estates Pinot Gris VQA 2009

Huff Estates is one of the few who grow Pinot Gris grapes in The County. Never heard of Pinot Gris?  Chances are that you have!  Pinot Gris is the same grape variety as the popular Pinot Grigio from Italy.    

Savvy Sommelier Tasting Notes: Crystal clear in colour with aromas of crunchy apple, stone fruit (think peach, nectarine, pear), continues into the taste with a ‘zippy’ lime finish that continues long after your first sip.

Suggested Food Pairing: Serve with dishes that are not too heavy or complex in flavours as the food will overpower the refreshing tastes of this wine. Seafood, roasted chicken & pasta alfredo would be delicious.

 

Sugarbush Vineyards Chardonnay VQA 2010

Savvy Sommelier Debbie Trenholm’s fingerprints are all over this wine!  She rounded up a group of wine enthusiasts with clippers in hand to help harvest the grapes for this wine at Sugarbush Vineyards. Winery owners Sally & Rob Peck have transformed their home & backyard into a boutique winery that is a going concern.  Definitely a winery to visit next time you are traveling around The County.

Savvy Sommelier Tasting Notes: Unoaked this Chardonnay has fresh aromas & tastes of citrus (can you find orange or is it mandarin?), vanilla bean that turns into reminders of English toffee (think Macintosh Toffee). It an absolutely pleasant wine to sip & enjoy.

Suggested Food Pairing: This wine would pair nicely with butternut squash soup, cheese-laden pasta, roast turkey or chicken.

Rosehall Run Pinot Noir County Cuvée VQA 2009

Pinot Noir is known around the world by winemakers as the “heartbreak grape”.  This grape variety needs care & nurturing around the clock. Difficult to grow in the vineyard & always changing in the cellar, crafting a good wine of Pinot Noir is the pinnacle of any winemaker’s personal achievement.  Rosehall has a growing reputation of producing some of the best Pinot Noir wines in ‘The County’. In March, Rosehall won a gold medal in the international Pinot Noir shootout in San Francisco, California – now that is impressive!

Savvy Sommelier Tasting Notes: This Pinot Noir has delicious aromas & tastes of strawberry, raspberry & red licorice with a dash of vanilla on the long finish.

Suggested Food Pairing: Pinot Noir is a versatile wine – it can be served chilled or at room temperature.  As the wine warms up, aromas, tastes & levels of acidity change too. Classic matches with Pinot are roast duck & mushrooms & grilled salmon too.

 

Grange of Prince Edward Northfield Cabernet Franc VQA 2007

The Grange of Prince Edward is one of the pioneers of the wine industry, located in a historic loyalist barn that was built in 1826. Cabernet Franc is often used in red wine blends (one of the varietals in a Bordeaux blend) yet in Ontario, this grape grows so well that winemakers are now keeping it aside to craft outstanding Cabernet Franc wines. 

Savvy Sommelier Tasting Notes: From the highly acclaimed 2007 vintage - the growing & harvest conditions were outstanding – this elegant & impressive wine has aromas of ripe red & black fruit, leather & cigar box (can you find these in your glass?). Concentrated flavours of cherry, raspberry, red roses & typical County limestone. There’s a punch of dark chocolate that lingers with the soft tannins.

Suggested Food Pairings: Fire up the BBQ!  Sausages, lamb chops, steak, grilled mushrooms or beef tenderloin would be delicious.

Sommelier TIP: Serve this wine with a dense piece of chocolate cake!
